Finger foods for a girls' night?!


Question: I am having a girls' night tomorrow. After careful consideration, I've decided to nix my original menu. I will have a veggie tray, chips, and desserts. There will be 12-15 girls there.

What I need is some sort of finger food to serve alongside those things. Any ideas? Please include recipes.

Remember--the easier, the better!

TACO PINWHEELS

1 package of 10 tacos (large size)
------------------------------------
2 packages cream cheese

Salsa (medium)

green onions
------------------------------------
sliced ham or sliced roast beef

Use beaters to mix up the cream cheese until creamy

Add and mix in: about 1 cup or less of Salsa

Mix in chopped green onions

salt and pepper

Spread thin layer of cream cheese mixture on each taco
Add sliced meat and roll up and tightly and then wrap each “log” in Saran wrap and put in plastic bag

Keep in fridge for at least two hours

Slice and serve

TIPS: we warm each taco in microwave for ten seconds before rolling – that way they don’t crack and are easier to handle

we add enough Salsa to get the right consistency…. changes sometimes with the brand of Salsa – don’t put the whole cup in – put in about 1/2 of a cup at a time and mix

have the meat cut thin, but not shaved

some people add chopped olives etc. over the meat….. I havent tried this

after rolling sometimes the cream cheese mixture will squeeae out of the ends – just scrape off before storing in Saran Wrap

the “ends” of each roll often don’t end up with any filling in – but these can be eaten by the cook, with any leftover cheese mixture or salsa

I like making a "Mini" sandwich tray.

your breads can be those small slices sold at the deli...or you can use regular bread and cut then into shapes with a cookie cutter....I normally do circles and squares.OR thin slices of French bread.
Have a selection of sliced meats & cheese.perhaps a chicken or tuna salad,and a few selections of mayos and mustards...and slices cherry tomatoes....

and let everyone build their own mini sandwich...

Buy a bag of frozen buffalo wings and pop them in the oven. serve with bottled blue cheese dressing and celery sticks.

Buy a square pizza and cut it into bite sized pieces.

Stuff a mushroom cap with sausage meat and bake for 20 minutes at 375. Stick a toothpick in each and plate them.

Bake baby potatoes, split them in half, top with cheddar cheese and bacon bits. Broil until cheese melts. dab with sour cream. Plate them.

My favorite but NOT TOO easy or not too tough based on your cooking skills.

Cook spaghetti until almost done. Remove and place in cold water. You can buy (think other cultures; asian, idian, etc) or make meatballs (Hell you can buy meatballs and stick a toothpick in them and serve them with jarred marinara also!). Cook the meatballs.

Wrap the spagetti around the meatball - a string or two will do. And deep fry them...I call them Caged Meatballs.

Get all kinds of fruit, strawberries, pineapple, blueberries, raspberries, melon, whatever you like and skewer them like a shish-kabob and make "fruit kabobs" serve with a pre-made fruit dip, or make one with equal parts vanilla yogurt, marshmallow fluff and cinnamon to taste.

Or try salami pinwheels...Get flour tortillas, 1/2 lb. salami, and chive and onion cream cheese. Spread each tortilla with cream cheese, layout an even layer of salami, then roll up and refrigerate. Once firm, slice into pinwheels.

Cucumber dill sandwiches....buy mini bread slices about the size of a saltine cracker, chive and onion cream cheese, cucumber, and fresh dill. Spread the mini toast with the cream cheese, place a slice of cucumber on top (I peel off the skin) and sprinkle with the fresh dill.

Buy the package of Knorr Vegetable soup mix and there is an easy dip on there that is very good...I think you get spinach, watercress, mayonnaise, and sour cream and mix with Knorr soup mix and refrigerate. Serve with triscuits. Very good.
