My homemade brownies and I will be happy to share. They make great gifts.

Amy's Brownies

Equipment:

*Measuring cup

*Measuring spoons

*Wire wisk (if none a dinner fork will work)

*Silicone spatula (optional, but helps get all the batter out of the bowl and works well for spreading...a large spoon will work if you don't have a spatula)

*Med-Large Mixing bowl (or you can do this on the stove with a 2 quart sauce pan)

*9 x 13 pan, prepared with a little oil or cooking spray. If "non-stick", go very light on the spray or it will be very difficult to spread the thick batter.


2 sticks unsalted butter, cut into pieces
2/3 cup plus 1 tablespoon of unsweetened cocoa powder
2 cups granulated sugar
4 large eggs (cage free organic)
2 tsp pure vanilla extract
1 cup sifted all purpose flour
3/4 tsp sea salt

Oven 350 for 25 minutes.

Melt butter in a med-large microwave safe mixing bowl. Add cocoa and blend throughly with the whisk until smooth. Add sugar and mix well. Whisk in vanilla. Blend in eggs, one at a time and beat 5 seconds between each addition. Add sifted flour and salt, mixing until the batter is well incorporated and no lumps remain. Do not overmix or the batter will be floury and tough. Add batter to pan and spread flat to the corners. Bake 23-30 minutes, depending on how fudgy you like them.
Cool then cut into squares. Store in air tight container.

You can leave these plain and have with a cold glass of milk or dress them up any way you like with chocolate, flavored baking chips or nuts.

Nanaimo bars!

Yum!

Italian marinara sauce that cooks for 6-8 hours and has a touch of cinnamon and nutmeg. No more clues.

Chicken Curry.
5 lbs. hind quarter or whole chicken
1/8 c. salt
1 tsp. black pepper
2 tbsp. sugar
2 tbsp. curry powder
1/2 can (6 oz.) coconut milk
2 tbsp. chopped onion
1 tsp. chopped garlic
2 lbs. potatoes (reg. or sweet)
2 tbsp. oil
Cut chicken into square chunks of 2 inches and marinate with salt, sugar and pepper. Cut potatoes into chunks smaller than chicken. Deep-fry potatoes in hot oil about 5 minutes.
Pour about 2 tablespoons of oil in a pan, wait 1 minute for oil to get hot. Put onion in and stir fry about a minute less (DO NOT OVERDO).
Add garlic and chicken at the same time and sauté chicken for 10 minutes. Add curry powder and continue sautéing for another 10 minutes. Then pour everything into a pot. Add water enough to cover mixture. Cook 15 minutes at medium-low heat. Cook another 10 minutes after adding potatoes.
Finally, pour coconut milk in and mix well. Remove from heat. Serve hot with French bread!

Cajun Chicken Salad
! pound Of cooked chicken cut into chunks
1/2 cup of mayo
2 celery sticks chopped
Zatarain's Creole Seasoning add to taste, this does get real spicy after sitting over night..
1/2 bunch of scallions chopped
1 green pepper chopped
Mix together and let sit overnight serve hot or cold
enough for 2 great for parties put on Hawaiian bread after cutting top off
