An egg is the perfect thing to ask a neighbor to borrow! Is there anyone you can ask? It's not too much so even if you don't know them well it's not that big of a deal.

The egg is a pretty important ingredient in your recipe, you should get some before you start making the corn bread. The only other thing you could use would be an egg substitute product, if you have that.

Some ideas here. I haven't tried them but it might be worth while. the applesauce or banana sounds logical esp cause it's cornbread and not a cake. You don't need lightness, you need binding.
The second ref gives more info..also why you would use certain substitutes. Give it a whirl. You can't mess up cornbread too much as long as it's not too dry. Some of the worlds greatest recipes were created by accident.

In muffins/corn bread you can use applesauce. 1/4 c = 1 egg
