Anyone have a recipe for a cuecumber sandwich ?!

Answers: peel ,seed and dice 1 cucumber....place in colander salt liberally ( place plate under colander to catch water) and let set for 2 hours...Mean while cream together1 8 oz pack of cream cheese, and one thinly sliced green onion.

cucumbers ,hummus and pita bread
Brown bread with the crusts cut off,buttered right up to the edges,then sliced,peeled cucumber.Simple
Butter bread, slice cucumber, de seed, pat dry place on bread, sprinkle of salt. Add second slice of bread, remove crusts and cut into 4 triangles.
You could marinate it in malt vinegar if you wished to add more taste.
For formal tea sandwiches, I always use fresh white bread, with cucumbers peeled in stripes, and sliced thinly. You have to protect the bread with fat or it will get soggy from the cucumbers. Butter would be the traditional British thing to use. I use either homemade mayo (you can use jarred if you prefer) or herbed cream cheese. Just let the cream cheese come to room temp, then whiz in the food processor with some finely chopped onion (preferably spring onion with the green tops, though regular onion, or chives will work) and a bit of dill. Make sure you put cheese mixture or mayo on both pieces of bread, or it will get soggy. Cut off the crusts, and cut the sandwiches into "fingers", or triangles. To keep sandwiches from drying out while they are waiting to be served, cover with plastic wrap, wax paper, or a slightly dampened napkin.
2 sliced of rye bread(or a bread of chioce)
4-6 thin sliced cucumbers
light cream cheese spread on toasted bread
sprinkle cucumbers with little salt and paprika.

I looked in my receipe book but I couldn't find it. Sorry!!?? I used to know how you fix them, but I can't even remember the ingrediens.
the easiest thing is soak thin slices of cucumber for one hour in good white vinegar, season with salt and pepper. add one teaspoon of chopped chives,if desired. drain the slices and use them between thin buttered slices of brown or white bread. if you go to southern living my recipes you can find some great cucumber recipes.
