U don't have to do all that, & don't need to put a whole in the center of the dough either. I made homemade lasagna noodles today-they're awesome. I used a rolling pin.
2&1/2 cups flour
1/3 cup water
2 eggs
1 Tbsp olive oil
salt(1/4 tsp approx)
I just put it all in the bowl, mix with fork until well blended.
U can tell if the dough is too sticky & sticks 2 ur hands,
just add a bit more flour, but not too floury(is that a word lol)
Place dough in fridge for 1/2 hour
I divide into thirds it's easier.
Place on parchment paper with a bit of flour it doesn't stick, if u don't have any, a well floured surface.
(meanwhile put water to boil)
Roll out as thin as possible so it's almost see thru but not quite.
If u wanna make fettucine, it's quick, u can use a pizza cutter & make thin strips. When all the strips are cut, & water is boiling, place in pot(I do it 1 at a time so they don't stick)
Make sure u put salt & drizzle oil in the water-the SALT is what prevents them sticking to each other. Turn temp down to med-high. They still take around 8-10 minutes but not 14 minutes like hard store-bought. Just taste one after 8 minutes. Drain & drizzle more olive oil to prevent sticking, and finish off your dish. They are SOOO much better than store-bought. Enjoy!!

This limits the shapes you can make naturally. But you can definetly make long flat noodles. I make noodles fairly often but not for spaghetti. You have to knead the dough quite a bit to develop the gluten, then let it rest a few minutes before rolling it out to a thin sheet. Roll the sheet into a log and slice. Unroll the slices and you are ready to cook.

1 pound semolina flour
1 cup unbleached all-purpose flour
dash salt
5 large eggs
1 tablespoon light olive oil

METHOD

On pastry board, mix dry ingredients. Make a well in the center.

Add eggs and oil in the well.

Slowly incorporate the wet and dry ingredients together to form a ball.

Using floured hands, knead to form a smooth, firm, yet pliable, dough.

Add more flour if needed or add water to hands if more moisture is needed.


divide dough into three pieces. Roll each piece out flat and thin as if you were rolling out pizza. Using a sharp knife, cut strips to desired length. If freezing, place carefully in plastic freezer bags.

To cook, add to salted, boiling water. Stir to prevent sticking. Cook time approximately 5 minutes or until al dente. Add sauce of your choice.

Serves: 4 - 6

You do not need a pasta machine to make homemade pasta. A rolling pin is all you need. If you don't have a rolling pin, use a bottle of wine to roll the pasta dough.

Believe me a pasta machine makes a lot less work of the rolling out of the dough and the shapes....However, finding a good recipe..and knowing the kneading amount, to raise the gluten is certainly the trick. Last week I thought I would make a recipe submitted for noodles.
I did...the noodles were too thick. (broke the wooden handle on my wooden rolling pin while trying to make them thin)...I didn't make them bite sized..as I rolled them in a log cut them and dropped them in my Chicken Soup. They fattened up nicely and looked like very long 1/2" diameter fat white worms...or baby snakes. They were chewy too....Now was it the recipe or me....I let them rest....I probably didn't knead them enough....seemed like I kneaded them forever though...
I cleaned up my mess ....flour on the floor, counter etc...just in the usual places.....WHEN I SUDDENLY REMEMBERED....I have not one but 2 Pasta Machines.........what a dummy....I asked my Husband ..."Do you know what a dummy you married".....He refused to answer.....Smart man....maybe I'll remember the Pasta Machine next time I get the urge to be little miss homemaker......

Start with 2 cups flour, a pinch of salt, 1/2 cup water. Knead. Let rest, knead again. Roll out using a rolling pin. Cut into ribbons.

Or start by making gnocchi, which is a form of pasta. Gnocchi with spinach and cheese in the dough is very delicious, and simple to make. You do not need any equipment.
