I take a whole chicken, wash well and dry,
Chop up an onion, some celery, 1/2 lemon and an apple... rough chop is good, or chop fine. Crush 3-5 cloves or garlic...
Salt and pepper the inside of the bird and stuff with the fruits and veggies.....
Rub the out side with a combo of chili powder and oriental 5 spice seasoning..... spray lightly over that with cooking spray..
Bake at 350 degrees for about 45-60 minutes, (check for done, poke thigh with knife point and juice should run out clear)
crank the heat to 450 for another 10-15 mins, to crisp the skin and let stand outside the oven for 20 mins.... cut and serve.... YUM!!!!
Take remaining bones and cooked veggies, boil up and strain for a great broth/stock... make soup or freeze for later use.

Boneless, skinless chicken breasts
1 stick margarine
1 sleeve saltine crackers - crushed

Preheat oven to 375. Melt margarine on 11x14 baking sheet in oven while preheating. When margarine is melted remove sheet from oven and coat each chicken breast in margarine, then in crushed saltines. Place back on baking sheet and bake for 40 minutes turning halfway through. This is so easy and tastes just like deep fried.

well.. you could like do a roast with vegies
or .. ricotta cheese and spinach chicken. i dont even know how to cook im like 13 haha

Here are a couple ideas....

sprinkle it with italian seasoning, cook 3/4 of the way per instructions, top with jarred spaghetti sauce, cook until done, and serve over hot pasta, topped with parmesan cheese.

Or- cook 3/4 of the way, top with a jarred curry simmer sauce ( trader joes has great ones...but the indian section of the grocery store has them too) and cook the rest of ht eway, serve with basmati rice and salad.
