Can I use a carbon steel wok to make soup or boil things or can it only be used to stir fry?!


Question: I just purchased a carbon steel wok and when I was washing it, a lot of black stuff came off. I looked online and it said that I need to season the wok before using....but when I purchased the wok, I wanted to use it to boil soup/etc. not stir fry. So I wa wondering if I could use it for such purpose or whether I need to use it to stir fry because it must be "seasoned" with oil...?

its not the best vessel for making soups, but it can be done. make sure you reseason it after, especially after tomato based recipes. the acid could leach through the season and your soup could taste metallic.

Woks are great for making soups. They should be cleaned and seasoned first.

A seasoned wok shouldn't have oil on it. When seasoning cookware, the oil is wiped off. Follow the instructions for seasoning carbon steel. If it doesn't instruct you to wipe the oil off, do it anyway.

Yes, you can use it for boiling and making soups. But you still need to season it so it doesn't rust and let it become nearly "non-stick."
