What is your favorite Barbecue?!


Question: I'm thinking to have a cook off in Memphis in May, and I am best at Barbecueing ribs... I'll make a cartoon of Porky Pig for my sign, and then cook mostly Pork Barbecue, because, I can never cook Chicken completely and the meat near the bones is usually still raw and I hate that...

Since you would be in a cook off you cant use this recipe exactly, but it would be a pretty good guide for you. I have made it a few times and it is awesome.

Chicken BBQ is really good. The best way to get your chicken to cook all the way is to finish it in the oven. Usually what I will do is pan fry it at a high temp just enough to brown it. Then put it in the oven until the internal temp reaches about 155 degrees (I know that this seems low but you need to let it cool before you can shred it any way and it will get to a perfect temp if you pull it out at this temp and will be super juicy) and let it sit on the counter to cool. Once it is cooled I like to pull mine apart with two forks then let it simmer in BBQ sauce. YUM!
