Any ideas how to make....?!


Question: a low calorie cookie? I've been doing very well on my diet... but been ABSOLUTELY craving a homemade cookie of some sort... but I don't want to "break the bank" when it comes to my calorie intake!!! Any suggestions would be GREAT! Thanks and have a great day!

LOW CALORIE MICROWAVE PEANUT BUTTER
COOKIES

3/4 c. diet butter
1/2 c. chunky style peanut butter
1/2 c. brown sugar, packed
18 pkgs. Equal brand sweetener
3 eggs
1/4 c. skim milk
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 3/4 c. quick cooking oatmeal

Cream together the butter, peanut butter, brown sugar and sweetener until light and fluffy. Add eggs, 1 at a time and beat well after each addition. Blend in milk and vanilla. Thoroughly stir together flour, soda and salt; add to the creamed mixture and beat well. Stir in oatmeal. Drop by teaspoon onto waxed paper on microwave oven glass tray. Be sure to make cookies small. Cook a dozen at a time on full power for 45 to 60 seconds or until firm, but slightly moist. Allow to cool slightly before removing from waxed paper. Repeat with remaining dough. Makes 7 dozen, 30 calories per cookie.

LOW CALORIE COCOA DELIGHTS COOKIES

1/3 c. sunflower oil butter
1/3 c. lowfat vanilla yogurt
1/2 c. sugar
1 tsp. vanilla
2 c. flour, sifted
2 tsp. unsweetened cocoa
1/4 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1 egg white, lightly beaten

Cream butter, yogurt, sugar and vanilla in a large bowl. Combine flour, cocoa, salt, baking powder and cinnamon. Blend into butter mixture. Shape dough into ball and wrap in wax paper. Chill at least 2 hours.
Preheat oven to 325 degrees. Roll out dough slightly less than 1/4 inch thick. Cut. Place on ungreased baking sheet. Brush with egg white. Bake 15 minutes. Makes 4-5 dozen. 35 calories per cookie.

OR

LOW CALORIE COCONUT COOKIES

1/2 c. butter
1 tbsp. Sucaryl
1/3 c. sugar
1 egg
1 tbsp. water
1 tbsp. orange juice
1 tbsp. grated orange rind
1 tsp. almond extract
1/2 c. shredded coconut
2 c. no-sift flour
1 tsp. baking powder
1/2 tsp. salt

Cream together butter, Sucaryl, egg, water, orange juice, peel, extract. Add in remaining ingredients and mix thoroughly. Form into roll and refrigerate until firm. Cut into thin slices and bake on Teflon cookie tin 10-15 minutes at 400 degrees. Makes 4 1/2 dozen cookies at 35 calories per cookie.

if you have been doing well with your diet it would be perfectly fine to splurge ....have a regular homemade cookie....chew slowly and savor....
