I need a substitution for whipping cream.?!
Answers: i am making scones and the recipe calls for 3/4 cup whipping cream. i realise that there are plenty of similar questions like this already but i need to know if milk will still work in a scone recipe.. most of the questions i found involved pasta. will milk suffice?
All the basic scone recipes I have are using milk
Basic Scone Recipe
2-1/2 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
2 tablespoons shortening
2 eggs, beaten
1/2 cup milk
Mix together lightly, the baking powder, salt, sugar, and flour. Cut in shortening. In a separate bowl, whisk together the milk and beaten eggs. Add the milk mixture slowly into the flour mixture. Roll out on floured pastry board to a thickness of 1/2 inch. Cut into 3-inch square pieces and fold over diagonally to make triangles. Brush with milk and dust with a little granulated sugar. Place on greased baking sheets. Bake at 450 degrees for about 20 minutes
For scones, Whole milk should work - it's going for fat/protein content, really.
use cool whip
Milk will suffice, but don't expect the scones to be as tender sa they would otherwise be. If you had half & half, that would be better. But milk, or even buttermilk, would work.
Cool Whip or Dream whip
It would be good if your milk was whole and not low fat. You can add an extra tablespoon of butter (not margarine) to up your fat content and this will help compensate for no heavy cream. Remove one tablespoon of milk out of the 3/4 cup to compensate for the added butter.
To equal 1 cup of heavy cream, use 3/4 cup milk + 1/3 cup melted butter.
(Not for whipping, only for cooking.)
Milk, soy milk, "Mocha Mix (TM)" or evaporated milk will all replace whipping cream...
