Pasta recipe..!(vegetarian)?!


Question: hi... ma cousin has just married a german lady( i am an indian) and they are coming over for lunch. the lady doesnot eat indian food.hmmm...ma oven is out of order... is there any easy pasta recipe that i can make at home?i just bought myself few packets of macroni...

Hi. I do mine with lots of veggies. Keep tomato sauce, soy sauce, pepper, vinegar handy.

Pre cook the pasta and keep ready. They must be washed well in cold water and kept ready

Chop onions, broccoli, beans, carrots. Keep peas & corn handy. Fry Onions first. Then slowly add each of the veggies and saute well in medium flame. When half done add salt and a dash of the different sauces. Leave out the pepper.

Add the cooked pasta to this veggie mixture. Use two large forks to toss them all together.Add more of the spices if required. Finally add pepper. Pepper Loses its flavour and taste if left on heat for a long duration.

Tastes best with no cheese or added on cheese - the choice is yours!

Try my Vegetarian Spaghetti Bolognese and just substitute macaroni for the spaghetti.

Do a tomato based mixed vegetables or mixed beans or both as sauce to add on the spagetti or pasta,it tastes lovely

Macaroni Primavera

Ingredients
4 quarts water
1 (8-ounce) package macaroni, uncooked
3 large carrots, scraped and sliced
2 cups fresh broccoli flowerets
1 cup coarsely chopped fresh yellow squash
1 cup cottage cheese
1/2 (8-ounce) package cream cheese, softened
1 tablespoon prepared mustard
1/4 teaspoon hot sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sliced fresh mushrooms
1 cup (4 ounces) shredded mozzarella cheese
1 cup (4 ounces) shredded Cheddar cheese
3 tablespoons freshly grated Parmesan cheese


Preparation
Bring 4 quarts water to a boil in a large Dutch oven; add macaroni, and cook 4 minutes.
Add sliced carrot, and cook 2 minutes; add broccoli flowerets, and cook 2 minutes. Stir in squash, and cook 1 minute; drain.

Combine cottage cheese and next 5 ingredients in a large bowl; stir in pasta mixture, mushrooms, mozzarella cheese, and half of Cheddar cheese. Spoon into a lightly greased 2-quart baking dish; sprinkle with Parmesan cheese and remaining Cheddar cheese.

Bake at 375° for 20 minutes, shielding with foil after 15 minutes to prevent overbrowning if necessary.

Yield
6 to 8 servings

dice some zucchini,onions,&g peppers s&p .cook for several mins then add a can of dices tomatoes...serve over noodles top with cheese
