What are good substitutes for Madeira, sherry & vermouth for sauces for those who can't do alcohol?!


Question: I need some good alternatives for adding wine and other alcoholic liquids to my recipes. I am waiting on The Sober Kitchen by Liz Scott. Any suggestions and tips appreciated.

White Wine Substitutions
Red Wine Substitutions

Non-alcoholic white wine Non-alcoholic red wine
1/3 cup white grape juice + 1/2 tbsp. rice vinegar 1/2 cup purple grape juice + 1 tbsp. rice vinegar


White grape juice

Purple grape juice
Apple cider/juice Vegetable stock
Vegetable stock
Cranberry juice

Water
Tomato juice
Chicken broth/bouillon/consommé Grape jelly
Ginger ale Water

White wine vinegar
Beef broth
Red wine vinegar

Liquid from canned mushrooms


Miscellaneous Substitutions:

Beer: Non-alcoholic beer, chicken broth, beef broth, ginger ale, white grape juice
Bourbon: Vanilla extract (diluted), sparkling cider
Brandy: Apple cider, white grape juice, peach or apricot syrup
Champagne: Ginger ale
Crème De Menthe: Spearmint extract
Kahlúa: Brewed expresso with a touch of cocoa powder
Port: Purple grape juice with lime zest
Rum: Pineapple juice, almond extract, vanilla extract
Sherry: Apple cider, coffee, pineapple juice, vanilla extract
Vermouth: Apple cider
Vodka: Apple cider, white grape juice with lime juice, water

I have actually used apple jelly, grape jelly and different juices in place of wine...love cranberry current in roast. Of course the flavors are a little stronger and absent of alcohol flavor, and much sweeter. When experimenting, try a teaspoon full and add from there.

If you live in Australia, there is a product called Verjuice. It is non-alcoholic. It is made from grapes and is an alternative to wine and even vinegar in cooking. It is made in the Barossa Valley in South Australia. It comes in white and red varieties

When I don't want the alcohol, but want the flavor I choose Basalmic Vinager. I substitute the dark for red wines and the white for rose and white wines. The white is less easily found, but is carried in larger grocery stores, Whole Foods, or Trader Joe's. Alternately, if you want the flavor without the zing of these mild vinegars. Try some of the non alcholoic wine versions sold in health food stores. Try Bickford Flavors for alcohol and sugar free flavors and oils. They have bourbon, rum, kahula, etc. They have a full list on line. I have used their flavors for years.

Maybe some flavored extracts? Or possibly just replace the alcohol with beef or chicken stock.

Use just water, chicken broth, apple juice things like that instead of the alcohol called for.

I have been there and done that. I have a friend who is deathly allergic to alcohol even the amount in vanilla.
