Diet Dinners that Don't Taste Diet?!


Question: I'm on Weight Watchers and I'm looking for some great tasting - not run of the mill dinners that are low on fat and calories... any suggestions?

..When I was dieting my biggest obstacle was finding ways to cook with out adding oils,marg or butter.....2 methods that I found worked well one was making packets...for example...a couple of chicken tenderloins,zucchini slices.a slice of onion....wrapped in foil and baked for 1/2 hour.they cooked in there own juices, and using water...I would put about 1/2 cup water in a small fry pan,,,,add lemon and dill and bring to a boil and add my fish..lower the heat and cover for 5 mins....

Marinades are the way to go! Marinade chicken breasts, salmon, lean steak, pork tenderloin, or shrimp.

Salmon Marinade
3 teaspoons butter, melted
2 teaspoons soy sauce
2 teaspoons Worcestershire sauce
1/3 cup brown sugar
2 cloves garlic, minced
1 teaspoon garlic powder
1 teaspoon ginger
1/4 teaspoon pepper
--Mix ingredients together. Place in flat tupperware container and store in refridgerator. Marinate 6-24 hours .

Pork Marinade
1/2 teaspoon five-spice seasoning
1/4 cup light soy sauce
1/4 cup brown sugar
2 tablespoons sherry wine or red wine
2-3 garlic cloves, crushed
2 teaspoons grated fresh ginger
--Combine all ingredients together and mix well.

Salmon Marinade
3 tablespoons butter
1-3 teaspoon lemon juice
2 1/4 teaspoons dill weed
lemon pepper seasoning, to taste
1 lb salmon fillets or steaks
--In a saucepan, heat butter, lemon juice and dill weed. Coat 1/2 salmon with mixture. Sprinkle with lemon pepper and grill, skin side down. Brush with remaining mixture while grilling.

Marinade for any Meat
1/2 cup soy sauce
1/4 cup green onions, finely sliced
1/4 cup lime juice
2 tablespoons brown sugar
1 tablespoon honey
2 garlic cloves, crushed
2 teaspoons crushed red pepper flakes
--Mix all ingredients and marinate with your choice of meat.
Marinade for less than 2 hours for chicken or fish, and marinade no more than 4 hours for beef or pork. Use your judgement on marinade time.
