Diet Dinners that Don't Taste Diet?!
Answers: I'm on Weight Watchers and I'm looking for some great tasting - not run of the mill dinners that are low on fat and calories... any suggestions?
..When I was dieting my biggest obstacle was finding ways to cook with out adding oils, marg or butter.....2 methods that I found worked well one was making packets...for example...a couple of chicken tenderloins, zucchini slices.a slice of onion....wrapped in foil and baked for 1/2 hour.they cooked in there own juices, and using water...I would put about 1/2 cup water in a small fry pan,,,,add lemon and dill and bring to a boil and add my fish..lower the heat and cover for 5 mins....
Marinades are the way to go! Marinade chicken breasts, salmon, lean steak, pork tenderloin, or shrimp.

Pork Marinade

1/4 cup light soy sauce
1/4 cup brown sugar
2 tablespoons sherry wine or red wine
2-3 garlic cloves, crushed
2 teaspoons grated fresh ginger
--Combine all ingredients together and mix well.
Salmon Marinade
3 tablespoons butter
1-3 teaspoon lemon juice
2 1/4 teaspoons dill weed
lemon pepper seasoning, to taste
1 lb salmon fillets or steaks

Marinade for any Meat

1/4 cup green onions, finely sliced
1/4 cup lime juice
2 tablespoons brown sugar
1 tablespoon honey
2 garlic cloves, crushed

Marinade for less than 2 hours for chicken or fish, and marinade no more than 4 hours for beef or pork. Use your judgement on marinade time.
