For 1 cup cake flour you would use 1-cup minus 2-tbsp of
all-purpose flour.

All is NOT lost!

nfd?

Try this:

1 3/4 cups regular flour
1/4 cup cornstarch

Mix and use as cake flour.

Actually, to substitute regular flour for cake flour accurately put 2 level tablespoons of cornstarch into the bottom of your measuring cup and then fill the cup with flour. Sift the flour or shake it through a little strainer. (Or just stir it very well with a fork.)

Do what the first person said, and sift it a few times.

Cake flour

Cake flour is made from a low protein ( 6 - 8%), fine-textured soft wheat so the flour contains a high amount of starch and less gluten resulting in lighter, less dense textures or a more "tender, fine crumb" for various cake and pastry items.

Equivalents
1 pound, 4 3/4 to 5 cups sifted

Substitutions
Best substitute for 1 cup cake flour use 7/8 cup all-purpose flour + 2 tablespoons cornstarch.
Pastry flour or substitute 7/8 cup of all-purpose flour for one cup of cake flour (product will be a bit more dense)

Substitute with the same amount of unbleached all-purpose flour. Your cake just won't have a fine soft texture. Its slightly different.

1 cup regular flower and 1 table spoon baking powder.
