Poached eggs and vinegar?!
How much should I add?
Why does this work?
If I don't have vinegar can I use alcohol (white wine/vodka?)
Answers: I heard that if I add vinegar to water that I cook poached eggs in that they will hold together in the pan.

In a word yuck!
Just use white vinegar. You put in about a splash- tablespoon- to the water in the pan. Yes, it will keep the whites together.
I don't know how it works but it does work. It does leave a vinegar taste though. If you want to keep the egg together you can stir the water around so it's going in a circle and then dump the egg into the center of the swirl in the center of the pan. No. White wine or vodka won't work.
see Martha Stewart.com ... she is very good with these, I am sure there is a video, she shows just how to do them, even ahead of time

IT doesn't work, I"ve tried.
Add your egg slowly into the boiling water, it starts to cook immediately and stays together better by putting it in slowly.
About a tablespoon to three cups of water will do the trick.
Gazoo, you don't taste the vinegar, it is just to help keep the eggs from spreading in the pot.

A tablespoon of vinegar. The acid in the vinegar coagulates the protein. You cannot substitute the vinegar for the alcohol. However, you can make wine poached eggs, for the how-to go to,

Also, visit this website, www.epicurious.com/bonappetit/cooking_cl... it shows another way to poach eggs.
Take a muffin tin and spray with pam, or any spray oil, crack and egg in each Muffin tin and place in a steam bath. Perfect poached eggs with no vinegar!
