Pork Ribs
3 pork rib racks
1 (24 ounce) bottle of kc Masterpiece Original barbecue sauce
3 tablespoons brown sugar
2 tablespoons Essence of Emeril
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon paprika
1 tablespoon cumin

Mix brown sugar, Emeril's Essence, salt, pepper, paprika, cumin, garlic and cayenne pepper thoroughly, and sprinkle on both sides of ribs to taste.
For grilling, carefully wrap in aluminum foil and cook bone side down approximately 1 1/2 hours on low temperature.
No need to turn.
After ribs become tender, remove from foil and continue cooking on both sides to desired crispness.
Apply BBQ sauce liberally to both sides and allow approximately 10 minutes for BBQ sauce to carmelize.
Brush a second time if desired, and allow to carmelize.
Remove from grill and enjoy!

THE BEST PORK RIBS
Pork ribs (any variety)
1 bottle barbeque sauce (I Prefer Sweet Baby Rays, but any will do)
1 c. Orange Juice
Mix together Barbeque Sauce and orange juice. Lay ribs in a baking pan and pour BBQ mixture over the top. The ribs should be nearly submerged in the BBQ mix.
Cover pan with foil and set oven to 250.
Option 1: Cook for aprox. 3 hrs (depending on amount of meat). Remove from pan and serve. The meat will be juicy and delicious and it should literally fall right off the bone. If you cook them this way they are EXCELLENT but its nearly impossible to eat them with your hands.
Option 2: Cook meat for about 2 hrs, remove from oven and transfer to hot grill. While on grill, continue to brush with BBQ mix from pan. They should only need a few minutes on each side. The BBQ sauce should get a bit crispy, and although the meat isnt quite as tender this way, will still be quite tasty and much easier to serve and eat.
Fire up the grille , while the grille is getting ready take your ribs and clean them by washing under cold running water for a few Min's. and then trim off any access fat,
next cover them with a good dry rub seasoning
put them on the grille and let cook for about 3-5 hrs real slow, if you can get some hickory wood that will really make them taste great, make sure that you put the ribs on the grille so the heat is not directly under the meat , every once in awhile put a few chunks of coal
and hickory on to keep the heat and flavor going
if done right the meat will come off the bone.

Dry Rub Pork Ribs
2? hours 10 min prep
Change to: servings US Metric
4 racks pork ribs (or as many racks as required)
The Rub
1 teaspoon garlic powder
1 teaspoon red pepper flakes
1/2 teaspoon paprika
1 teaspoon fresh ground black pepper
1 teaspoon mustard powder
2 teaspoons salt
3 teaspoons brown sugar
Preheat oven to 325°F.
Cut pork ribs into sections of 3 or 4 bones.
Mix remaining ingredients well, sprinkle on both sides of ribs and rub into the meat.
Seal rib sections in foil with a tablespoon of water in each package, and bake for 2 hours on a cookie sheet in the center of the oven.
Open foil carefully as steam escapes.
Can be crisped on a hot BBQ if desired but will be great just the way it is.
(Enjoy with oven cooked potato nuggets for a really simple meal).
Take your ribs and season them. I use my broiler pan and spray it Pam or the like. In the bottom I add apple, grape or some other fruit juice. If you don't like juice, add a cup to cup and a half water. Place ribs on grated top of pan and cover with foil tightly so steam will create. Bake 3-4 hrs at 250 degrees. If they aren't brown enough for me toward the end of cooking I turn the broiler on for a few minutes with the foil off. I have had no complaints other than there are never enough.
