What is your favorite casserole /one pot meal ?!
just want something new and exciting
Answers: looking for something i havent tried before ,and believe me with 6 children ive tried alot of casseroles and one pot meals .and my kids arent picky so we,ll try any thing.

I have two...taco soup which I can't find the recipe but there are a bunch out there that are very similar to each other. It's the one with beans, hominy, corn, tomatoes, taco seasoning, italian dressing seasoning, etc. We like to eat ours with crushed doritos and shredded cheese. My 12 year old asks for this quite often.
Also Creamy Italian Chicken...
2 pounds boneless, skinless chicken breast cut into bite size pieces
1/2 stick butter
4 oz cream cheese
1 can chooped green chillies
1 package Italian salad dressing mix
1 can golden mushroom soup (you can use cream of mushroom too)
1/2 cup water
Place chicken in crock pot. Combine all ingredients except water. Spoon mixture over top. Do not stir. Cover and cook on low 6 to 8 hours or on high for 3 to 4 hours. Serve over rice or noodles. It taste really good with spinach fettucine noodles.

Diced bell pepper
five cloves garlic more or less-diced
fresh mushrooms-sliced
link of sausage (beef and pork) sliced (venison sausage is better than eckerich--just look beyond the regular sausage in the stores)
onion-diced
saute all of that together then add a little water or I like to use chicken broth is better.
Add new potatoes (you can quarter them or however you wanna do it) and FRESH green beans not canned or frozen.
Cover and cook till potatoes and green beans are done.
IT IS SOOOOO GOOD!!!! Husband LOVES IT.
15 bean soup...wonderful winter meal.
Chicken and Corn Chili
4 skinless, boneless chicken breast halves
1 (16 ounce) jar salsa
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
salt to taste
ground black pepper to taste
1 (11 ounce) can Mexican-style corn
1 (15 ounce) can pinto beans
Place chicken and salsa in the slow cooker. Season with garlic powder, cumin, chili powder, salt, and pepper.
Cook 6 to 8 hours on Low setting.
About 3 to 4 hours before you want to eat, shred the chicken with 2 forks. Return the meat to the pot, and continue cooking.
Stir the corn and the pinto beans into the slow cooker. Simmer until ready to serve.
I always serve this with cornbread.

chicken and rice..i love this..you boil chicken you can do on the bone or strips of breast..which is what i use...you can double it or i guess even triple ....i always do about ten breasts strips....take a box of uncle bens rice...you can use whatever flavor you like..i use the regular one..make it as usual..take a casserole dish...put a layer rice in and layer of chopped chicken...debone it if you use that kind...i just do rough bite sized chops...on top of the chicken do cream of mushroom soup you can use cream of chicken...do not add water its thick so spread it the best you can...then throw some cheese on it..you can do plain mozzarella or mixed...then do the layers all over again...i always put some cracked pepper on top...do some garlic bread and a nice salad and its great...even when my kids were at their pickiest they would eat this..and its great on cold days ....i like to eat it cold too...
the other thing i love to do is make a pot roast...you can use just about any cut of meat..throw some pepper in some dried onion..let it cook and then drain it...take the meat and just pull it apart add your favorite barbecue sauce..get some pickles and buns....serve with fries i always add some hot sauce on my own sandwhich...
this i got from a friend long ago...you get a head of cabbage and chop it up..get some potatoes and chop them up get some of that sausage that is like the little smokies..in the rope...and do bite sized chops...fry the potatoes till they are brown and fried..when they are almost done add the cabbage...or cook the cabbage by itself and then readd the potatoes...and then the sausage...its great..some salt and pepper..you can also heat it up in the oven if you want to make it ahead of time...
Beef Shepard's Pie (casserole).
Make Ahead Casserole
INGREDIENTS
2 1/2 cups seasoned croutons
1 pound spicy pork sausage
4 eggs
2 1/4 cups milk
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 (4.5 ounce) can mushrooms, drained and chopped
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 teaspoon dry mustard
2 sprigs fresh parsley, for garnish
DIRECTIONS
Spread croutons on bottom of greased 9x13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Spread sausage over croutons.
In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.
The next morning, preheat oven to 325 degrees F (165 degrees C).
Bake in preheated oven for 50 to 55 minutes or until set and lightly browned on top. Garnish with parsley sprigs and serve hot
Albert Grohe’s Rice with Chicken and Sausage
Makes 6 to 8 servings.
3 slices bacon, chopped
2 cups onion, chopped
3 cloves garlic, minced
2 green peppers, chopped
1-pound Spanish or Italian HOT sausage
1-pound Spanish or Italian SWEET sausage
4 cups chicken stock
Salt & freshly ground black pepper
12 green stuffed olives
1 Tablespoon capers
? teaspoon powdered saffron
1 three-pound chicken, cut into pieces, or 3 pounds thighs
1-tablespoon paprika (sweet)
? cup olive oil
2 cups white rice
1 cup cooked green peas (optional)
Pimento for garnish
1. Heat oven to 400 degrees F.
2. In a skillet, combine bacon, onions, garlic, and green pepper. Slice sausage into ? inch lengths and add. Cook until onion is wilted.
3. Spoon the mixture into a large casserole and add ? cup stock. Add salt and pepper to taste, olives, capers, and saffron.
4. Sprinkle chicken parts with salt, pepper, and paprika. Brown in olive oil in the skillet, then place in casserole.
5. Add rice and remaining stock, cover. Bake 35 to 40 minutes, stirring once during the baking. When rice is tender, add peas, reduce temperature to 300 degrees F. and cook 10 minutes.
6. Garnish with pimento.
My family uses our crock pot to make chili quite often. We use light and red kidney beans, hamburger, stewed tomatoes, chili flavoring (the packaged seasonings you find at grocery stores), ketchup, and brown sugar. I don't know the exact amounts, because I actually never make it. We love to make this because all you have to do is through everything into the crock pot in the morning, and when you get home it is all cooked. You simply have to break up the hamburger, mix it all up, and eat.
I make a simplified gumbo that is a comfort food for me because I don't eat meat and I only eat fish/seafood occasionally.
I saute chopped onion, bell pepper, celery and zucchini in a little olive oil until soft, add chunks of whatever type of fish was the best deal (usually pollack, cod or tilapia) along with whatever seafood looked too yummy to pass up-often shrimp and scallops. When the fish is cooked I add V-8 juice, cayenne and basil and simmer 1/2-1 hour to develop flavors and serve with brown rice and Louisiana hot sauce..
hamburger rice casserole
it is very simple to make first of all you brown your hamburger drain
now here is the easy part
1 can crm mushroom soup per pound of hamburger
1 cup instant rice ber pound
mix together add salt and pepper
cover and bake at 350 for 45 min.
I hope you like this recipe it is one of my kids favorite meals they are all grown up now and if I want them to visit all I have to do is tell them that I am making hamburger rice for supper and they show up and it is about a 2 hr drive for one of them.
My favorite casserole:
Middle Eastern Potato Tomato Sauce Casserole
Ingredients:
4-6 potatoes - peeled and sliced thin
2-3 cans of tomato sauce
1 small onion chopped
cinnamon
allspice
salt
pepper
option: parsley
Directions:
Sauté chopped onion in butter; add 1 teaspoon of cinnamon and 1 teaspoon of allspice.
Add 1/2 teaspoon of cinnamon and 1/2 teaspoon of allspice to each can of tomato sauce.
Add salt and pepper to taste to each can of tomato sauce.
Prepare casserole pan with cooking spray - layer tomato sauce (with seasonings), then potatoes, then sautéed onions, then tomato sauce -then potatoes, tomato sauce, onions, etc... End casserole with a lot of tomato sauce and onion mixture on the top.
Bake at 350 degrees for at least an hour or until the potatoes feel soft.
Can be served with plain yogurt and/or plain rice.
For looks - you can sprinkle chopped parsley on top.
One pot meal:
Veggie Pot Pie
Ingredients:
1 frozen pie shell, or fresh dough if you have time
2-3 cups veggie broth
1-2 potatoes
3 medium carrots
a variety of veggies such as green beans, zuchinni, mushrooms, or just about anything.
1 package frozen spinach
vegan grated or sliced cheddar to cover pan in two layers
lots of good spices: garlic,
cumin, tarragon makes it savory, whatever you like.
Directions:
Thaw pie she'll and try real hard to take one 1/2 out of the tin w/o it breaking into a million pieces. If you manage, you are a god(dess). Meanwhile, cook chopped veggies (NOT spinach, just keep it till later). Cook in micro or oven till about 3/4 cooked. To make sauce, heat broth in large kettle, add spices, and lower heat. Add slowly either cornstarch or flour (I use flour), till slightly thickened. You can add dairy free milk and use veggie buillon cubes. Add to this cooked veggies and coat them w/sauce.
Meanwhile, layer 1/2 cheese on bottom of lower crust. Spoon in veggies and sauce, then add spinach on top. add rest of cheese on top of that, and close it up as best as you can w/ the torn top shell. at least mine always tears. bake at 400 for about 45 min, till crust is brown and delicious cheese and juice oozes out

(8 servings, dairy free, low in fat)
1.5 cu thick sliced onions
3 large ancho or poblano peppers
1.5 lbs. tomatillos (abt. 18), remove husk and cut in half
1 clove garlic, crushed and peeled
1 cu. water
1 cu canned black beans, drained and rinsed
1 cu canned pinto beans, drained and rinsed
1 cu cooked quinoa
1 tsp. ground cumin
1 tsp. sugar
salt and fresh ground pepper to taste
2 Tbs. finely chopped fresh cilantro
Cornmeal Topping:
5 cups water
1.5 tsp. salt
1 2/3 cup yellow cornmeal - stoneground is best
preheat oven to 450. spread sliced onions and whole peppers on one baking sheet; then tomatillos, cut side down on another baking sheet. put both in oven and roast until onions brown & tender and peppers blistering, 18-25 min. let cool. remove skins from peppers, split open and discard seeds.
reduce oven to 425.
chop roasted vegetables finely.
In large skillet combine roasted vegetables, water, beans, quinoa, cumin and sugar, salt and pepper. simmer about 5 min. remove form heat and stir in cilantro. set aside.
make topping:
in 2 quart saucepan, bring water and salt to boil, lower heat and slowly add cornmeal, whisking constantly until thickened, about 4 min.
lightly grease a 9x13 in. baking dish. spread 1/2 cornmeal in dish. spoon filling over cornmeal. place remaining topping over filling in a cross-hatch pattern, (you can roll it like playdoh, then flatten a little).
Bake pie until bubbling, about 20 - 30 minutes. let stand 5 min. before serving.
This is a traditional Welsh soup called Cawl (Best eaten whilst Wales are beating England at Rugby!!!)
6 Lamb shoulder steaks
Diced carrots, onions, swede, parsnip, leeks and potatoes
Salt
Pepper
Put all the ingredients together and simmer for about 90 minutes.
Can't get easier than that!!!
This one comes from my daughter in law, kids love it and it is so simple,
2 lbs ground chuck, lowest fat is better
salt and pepper, or seasoned salt (to taste)
1 can cream of mushroom soup
1 can cheddar cheese soup
2 cans french style or regular green beans, (I like fresh)
1 bag frozen french Fries, or tater tots
First spray bottom of 9by11 pan with cooking spray,
spread uncooked hamburger on bottom of pan,salt and pepper or season salt to taste, then for next layer, spread condensed soups on top of hamburger, then spread green beans on that, last layer is potatoes, cover them evenly over top.
bake in pre-heated 350 degree oven, for a hour , more if needed, when bubbling and potatoes are nice and brown! serves about 6- 8, depending on age and appetite!
You've probably had something like this but hey, I love it! Take enough chicken thighs for however many people you are cooking for, brown them all over and add to a casserole dish, chop up 2 onions, a red pepper, mushrooms, garlic, mini new potatoes and a butter nut squash, brown all the veggies and add to the casserole dish. Top up with chicken stock, season to taste and cook in the oven for at least 2 hours. Add chopped fresh herbs and then serve with mash
Kid friendly skillet meatloaf with noodles
2 lbs hamburger meat brown in skillet then add
1 onion chopped
1or 2 cloves garlic chopped
1/2 green bell pepper chopped
1 can diced tomatoes
1 can water
now add spaghetti noodles or elbow macaroni
cook until noodles are done salt and pepper to taste may have to add more water depending on how many noodles you use...
Serve with garlic toast
This is so quick and easy and you can make your own variations to suit your family...HOPE IT HELPS
