I have tons on pecans. Any suggestions for something sweet" Maybe a bar of some sort?!
Makes 2 dozen bars
2 tablespoons butter
2 eggs
1 cup brown sugar
5 tablespoons flour
1/8 teaspoon baking soda
1 teaspoon vanilla
1 cup chopped pecans
Confectioners' sugar
Preheat oven to 350 degrees. Place butter in 9-inch square pan and place in oven until melted. Beat eggs; beat in sugar, flour, soda and vanilla. Stir in pecans. Pour over melted butter; do not stir. Bake for 25 minutes. Cool in pan for five minutes; then turn out onto a rack to cool completely. Sift confectioners' sugar over top. Cut into 24 bars.

Graham crackers
1 cup butter
1 cup brown sugar
1 cup pecans
2 teaspoons vanilla
Preheat oven to 350 degrees. Line a 10-by-15-inch jelly roll pan with graham crackers. Melt butter in a saucepan; stir in brown sugar and pecans; boil for one minute. Remove from heat; stir in vanilla. Pour evenly over graham crackers. Bake for eight minutes. While still warm, cut into bars. Remove immediately to cool on wire racks.

Toast them in the oven with butter and salt on them, have as a snack. Yummy!!!

Go on line and look for the recipes for Kentucky Derby Pie. It is amazing. You can also, take the Rhodes Carmel Rolls, thaw them, mix the pecans with the Carmel sauce, and you have amazing Carmel/pecan rolls. YUMMM!
