substitute;

another extract-almond, walnut, orange, mint, pineapple, lemon. always good to have an assortment of these on hand.

any liquor-creme de mint, creme de cocoa, dark or light rum, cassis, sherry (drinking, NOT cooking).

smashed peppermint candys (candy canes from christmas)-cold coffee-even citrus pop (not diet) will add the extra needed zippy flavor.

experiment. add what ever flavor sounds good to you. that's how they make those expensive speciality cakes in the stores.

Vanilla make a Delicious taste for cake. Without Vanilla it doesn't matter.
