I am a former chef and caught the episode last night, it was a mix of many veg, and potatos, all pre-cooked together, cabbage, potatos, turnips, beets (yellow), carrots, swede (rutabagas), he then drained and mash them added them to the pan and as with regular B&S you keep moving it, a squishing it down to achieve the squeak, I tend to us bacon fat or veg oil, mash it like he did, but keep it on a low heat and trun it until it starts to colour then leave it and flip it all at once on a plate tot the other side.

The sausage idea (just plain old bangers with a few herb is fine) was fun looking and the onion gravy was a kick, for me the balsamic vinegar was a bit of over kill, a dash with stock and a bit of flour, even a tablespoon of other sauce like HP or Daddies for a kick. I am a Canadian but have travelled to the UK and I am of English/Irish/Scottish heritage and my Gran was a Liverpudlian.

Here is a recipe for it...not necessarily Jamie's recipe..

Irish Tradition of Bubble & Squeak

3 tablespoons butter
1 medium onion, finely chopped
2 cups of cabbage, shredded
1 1/2 lb potatoes, peeled and cut them into chunks
Salt and pepper, to taste

In large saucepan, cover potatoes with lightly salted water. Cover and bring to boil; reduce heat and boil gently for 10 minutes or until soft. Mash until very smooth.

In large saucepan, boil cabbage with small amount of water until tender. Drain, set aside.

In large nonstick frypan heat butter over medium-low heat and saute onion just until softened (about 5 minutes). Sitr in drained cabbage and cook for 3 minutes. Add potatoes, folding to mix well. Add salt and pepper, to taste.

Leave on medium-low heat and listen to it until it bubbles and squeaks in the pan.
