Ham is cut from the thigh and rump of the animal. It doesn't contain any ribs. Do you mean pork or beef ribs, by any chance?
Ribs come from the middle part of the body up to the shoulder which is used for the cheaper boiling joint so there are ham ribs while the ribs from the middle are where the back and streaky rashers come from the smells great
They were probably know as ham ribs, but having been in the trade, I suspect it was a by product of boning out middles of bacon.
Sometimes the bones were taken out individually, and consequently had no meat on them. If however they were, what was called "sheet boned" then there was usually some recoverable meat when cooked.
My mum used to make wonderful soups from them, only we call them bacon ribs. I bought some not so long ago and made Ham and Lentil soup but it just didn't taste like my mums... but it was still good.
yeah, the only thing is Ange, ye dinnae get much meat on them, but like yi said great fir soup!
