Ensalata Caprice - Italian

Fresh mozzarella (ball)
fresh ripe tomatos
basil leaves
cucumber
basalmic vinegar
ground pepper

slice the mozzarella, cucumbers, and tomatos into slices - all fairly thin. Layer on a plate in a decorative fashion with the basil leaves. Drizzle with the basalmic vinegar and add a light dusting of ground pepper. Delicioso!

i like this salad, its grated carrots, with thinly sliced red onions, finely chopped green chillies, salt and pepper to taste and a little cumin seeds, and lemon juice, mix all together

you could just do the origanl salad e.g lettus, tomartos, carrots and so on

I've never taken this anywhere that folks don't ask for the recipe. It's WONDERFUL!

spinach pine nut salad:

combine one bag baby spinach leaves

Asian Chicken Salad

INGREDIENTS
2 tablespoons brown sugar
2 teaspoons soy sauce
1 tablespoon sesame oil (optional)
1/4 cup vegetable oil
3 tablespoons rice vinegar
1 (8 ounce) package dried rice noodles
1 and 1/2 hearts romaine lettuce - rinsed, dried, and chopped
4 boneless chicken breast halves, poached and shredded
3 green onions, chopped
1 tablespoon sesame seeds, toasted

DIRECTIONS
Prepare the dressing 30 minutes ahead of time by combining the brown sugar, soy sauce, sesame oil, salad oil, and rice vinegar in a salad dressing carafe.
To prepare the Chinese rice noodles, heat a skillet with a few tablespoons of oil and break off a little bit of the noodles and add them to the skillet and fry them. They will puff up in the skillet, so only add a few at a time. As they begin to puff up, remove and drain them on paper towels. Be sure to cook long enough as the under cooked noodles will be like eating needles. Once cooked, add them to the salad mixture.
In a large bowl combine the romaine lettuce, cooked and shredded chicken, green onions and toasted sesame seeds. Let chill about 10 minutes, and just before serving add the cooked rice noodles. Serve in salad bowls and offer the dressing in a pourable container so your family can add as much dressing as they want. You can also pour the dressing over the top of the salad, toss, and serve immediately.

Poaching Chicken Breast
Place chicken breasts in baking pan in single layer. Cover pan tightly with aluminum foil. (A covered casserole dish may be used.) Put in 350 degree oven. They will poach in their own juices in 30 minutes. Test for doneness. About 165 degrees.

I must say, I don't know the recipe, the salad -bar at college offers some lush pasta based salads.
I would recommend, a noodle based salad,
tomatoey, or if you wanted to be more regular,
you could use pasta, (but the noodle idea would probably look classier) maybe mixed with a bit of chicken or.... etc.
I adore this for my lunch, it has parts of tomato in but I would say it is cooked first and then left to cool for ten or so minutes.
Hope this helps.

This one is very interesting and yummy, try it!

roasted pine nuts and heart of palm over mixed greens goes well together. Simplicity with salads goes a long way.
