Raspberry coulis question?!
Answers: OK, so I couldn't find my tried-and-true raspberry coulis recipe (to be served with flourless chocolate cake for my husband's birthday). I improvised with confectioners' sugar, thawed frozen raspberries ad lemon juice, adjusting to taste. But I think I made a mistake by pureeing the sauce in a blender before straining it. I don't have any cheesecloth, so after pureeing it, I just used the fine-holed, cone-shaped strainer from my food mill. The puree looks and tastes good, but there are pieces of pureed raspberry seeds that got through the strainer. In my place, would you still use it as is? I suppose I'd be willing to strain it again, but...no cheesecloth. What would you do in my place? Thanks.
Personally, if it is just a few seeds, I would serve it as is. I know you want it perfect but these things happen and you have other things to do ... like enjoy your husband's birthday with him!
If you can't stand it, then you might try putting two strainers together to form a double filtration system.
Another way, sort of odd, but works well, is to take a NEW knee-hi or pair of stockings; cut the leg open; rinse it well; stretch over measuring cup; secure with rubber band (but not taught; should have a dip in the center); pour Coulis through. No seeds.

I'd go buy some cheesecloth and strain it again.
If you have coffee filters pour it through there, if not line a strainer with a paper towel and run it through again.
I would puree it for much longer. The seeds actually dissapear after a while if you have a good blender. Make sure theres enough liquid in there too.
pass it through a pair of hose (clean ones!)

NEW, clean pantyhose? The coffee filter is another good idea.
