This is simple to make and really, really good!
* 1 pound fettuccini pasta
* 1 1/2 cups butter, divided
* 1 pound skinless, boneless chicken breast halves - cut into cubes
* 2 (16 ounce) containers whole milk ricotta cheese
* 1 pint heavy cream
* 1 teaspoon salt
* 1 cup grated Parmesan cheese
1. Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
2. Melt 2 tablespoons butter in a large skillet over medium heat. Saute chicken until no longer pink and juices run clear.
3. In a large saucepan combine ricotta cheese, cream, salt, Parmesan cheese and remaining butter. Cook over medium heat until well combined, about 10 minutes. Stir in cooked fettuccini and chicken; cook until heated through.

Here it is

2 boneless chicken breasts, cut into chunks
1 tablespoon olive oil
2 tablespoons sun-dried tomatoes or 1/2 fresh tomato, chopped
2 tablespoons basil
1 1/2 tablespoons crumbled bacon
1 cup mushrooms, sliced
8 fluid ounces no-salt-added tomato sauce
4 fluid ounces half-and-half
2 tablespoons grated parmesan cheese
2 cloves garlic, minced
cooked pasta





1. Sauté the chicken in olive oil.
2. Turn and add the garlic, sun-dried tomatoes, and mushrooms.
3. When the mushrooms begin to darken, add the basil, bacon, tomato sauce and cheese.
