How would one make a great chili?!


Question: These days I only eat turkey hot dogs and was wondering if there is a chili I could prepare for a topping. It must contain no salt and fat free. You know heart healthy.

I have a "secret" recipe from a health food cafe I worked at. It's a beanless chili but you can add any type beans you like. Use TVP (textured vegetable protein), salt free tomatoe sauce & canned diced tomatoes, shredded carrots and spices to suit your taste. Cook all together to desired consistancy. When I make MY chili I add ground chicken/turkey instead of TVP, and also add chopped onions, green pepers, garlic and at least 2 or 3 different types of beans...usually black beans, small white or red beans and garbanzos (chick peas). YUM! High in antioxidents, low salt, low fat.

go pick some chili pepers, Mash it together with salt and beans and then voi la!

Heres how I make chili

chop one onion and one green pepper put it in a large saucepan add 1lb ground turkey or ground beef (turkey is lower in fat) and brown off the meat. Add one can red kidney beans and one can pinto beans and a can of tomato sauce. Add a tablespoon of chili powder...salt and pepper to taste. Simmer covered until beans are tender. If you want a little kick add a couple dashes of hot sauce.


Heres a tip....if you rinse the beans it will cut down on gas

dude....there is no such thing as a great chili without salt or fat.....i don't think anything is good without salt or fat ;)

You do realize your turkey hot dogs are loaded with sodium? I was going to give you a recipe that doesn't contain salt and is fat-free but tomatoes - in any form, contain sodium which is a salt. And all chilis are based on tomatoes. I understand heart-healthy (hubby had 5-way bypass heart surgery).

I'll give you the recipe and you decide what you want to do with it. Also, if you want to stretch the chili and make yourself think it has meat in it, you can take 1/4 cup of bulgar and 1/2 cup water, mix together and zap in the microwave until it starts to boil. Remove, cover and let set for 15 minutes. Then add that to your chili. It has the texture of ground beef that is broken down to tiny pieces and it takes on the flavor of what it's in with. This makes a small amount:

CHILI
1 can tomato sauce (regular size)
1 small can tomato sauce (the tiny ones)
2 cans kidney beans - drained and rinsed (that will take off their sodium)
1/3 to 1/2 pkg Chili mix (check it for it's sodium level)
1/2 lb 92% fat-free ground beef or ground turkey

Saute the ground beef or ground turkey until no longer pink. Drain off all the fat (if it really worries you, you can even put the meat in a sieve and rinse it off with hot water to remove all the fat). Sprinkle the meat with the chili mix, stir and add to a pot with the rest of the ingredients. Bring to a boil, turn the heat down and simmer for 30 minutes. Enjoy!

Ray's chili:

Heat deep non-stick pan on medium for 5 minutes WITHOUT OIL OR BUTTER;

Brown one lb of 70 to 75% beef (can be cooked without beef too);

Add half of a small onion chopped after meat's red-raw-look is gone;

Add large can Hormal chili without beans;

Add small can Hormal chili with beans;

Ro-Tel, medium or mild found in the canned tomato section at the store;

1/8 to 1/2 teaspoon garlic powder if you have it. Chili is good without it;

Cook about 50 minutes on low or simmer.

Be sure to stir every 15 minutes and watch the clock or it will burn.
