Tiramisu

4 layer delight! Easy & quick. You can make it in several different flavors. chocolate, butterscotch, lemon, vanilla strawberry etc. I'd go for the chocolate! If you want sugar free then make homemade pudding with splenda or get sugar free instant pudding.

1st layer:
? cup pecans (chopped fine)
1 cup flour
1/2 cup (1 stick) butter
2nd layer:
8 oz cream cheese (softened)
2 cups (or more if desired) Cool Whip
1 cup powdered sugar
3rd layer:
2 lg pkg instant choc pudding
3 cups milk
1 tsp vanilla extract
4th layer:
2 cups (or more if desired) Cool Whip
chopped pecans for the top

Melt butter in saucepan. Turn off heat. Add pecans and flour and mix with spoon. Spread in 9 x 13 pan. Bake for 15 min.
Chill (You can put in freezer for 15-20 min for hurry-up fixin)
Mix softened cream cheese, cool whip and powdered sugar in bowl with mixer. Spread over cooled pecan layer. (Spread delicately so not to disturb crust)
Chill (back in the freezer for a few minutes – “always in a hurry”)
Mix chocolate pudding, milk and vanilla extract til thick. Spread over cream cheese layer.
Spread cool whip on top. Sprinkle with nuts. If desired, strategically place cherries (whole or cut in half) on top.

I made some killer cookies made from Funfetti cake mix. There's a recipe on the box...they are very good and pretty simple to make.

You could go to the bakery and get some tarts. You could bake chocolate chip cookies or you could make a pie or cobbler. Also, sugar cookies and banana brean are really good things. Hope that helps.

Strawberry Sheet Cake & Icing

CAKE:
1-box White Cake mix
1 small box strawberry jell-o
? cup frozen strawberries, thawed
?- cup water
1 cup oil
4 eggs

ICING:
16 oz. box powdered sugar
1/4- cup butter, room temp
? cup frozen strawberries, thawed

CAKE: Preheat oven to 325oF. Mix jello and cake mix together, add water and oil; mix on med. speed. Add eggs, one at a time, beating well. Add berries. Bake 30 to 45 minutes in greased/floured 9 x 13 baking pan.

ICING: Cream butter, powdered sugar and strawberries together. Spread on cooled cake

One-Bowl Chocolate Mocha Cream Cake
From Cooking Light

Cake:
2 cups all-purpose flour (about 9 ounces)
1 cup granulated sugar
1 cup packed dark brown sugar
3/4 cup unsweetened cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup reduced-fat mayonnaise
3 tablespoons canola oil
1 cup hot strong brewed coffee
2 teaspoons vanilla extract
1/3 cup semisweet chocolate morsels
Cooking spray

Mocha Cream:
1/4 cup boiling water
1 tablespoon instant coffee granules
1 (7-ounce) jar marshmallow creme
1 (8-ounce) container frozen light whipped topping, thawed
1/3 cup light chocolate syrup (such as Hershey's Lite Syrup)

Preheat oven to 350°F.

To prepare cake, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 6 ingredients (through salt) in a large bowl. Add mayonnaise and oil; beat with a mixer at low speed until well blended. Slowly add brewed coffee and vanilla; beat with a mixer at low speed 1 minute or until well blended. Stir in chocolate; pour batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.

To prepare mocha cream, combine water and coffee granules in a large bowl; stir until granules dissolve. Add marshmallow creme; beat with a mixer at low speed until smooth. Fold in whipped topping. Spread mocha cream over top of cake; drizzle with chocolate syrup. Chill until ready to serve.

LEMON BARS

For the Crust:
? lb. unsalted butter, room temp.
? cup granulated sugar
2 cups A/P flour
1/8 tsp. kosher salt

For the Filling:
6 extra-large eggs, room temp.
3 cups granulated sugar
2 Tbsp. grated lemon zest (4-6 lemons)
1 cup freshly-squeezed lemon juice
1 cup A/P flour

Preheat oven to 350oF. For the crust, cream butter and sugar until light in the bowl of an electric mixer fitted with a paddle attachment. Combine flour and salt, and with mixer on low, add to butter until just mixed. Dump th edough onto a well-floured board and gather into a ball. With floured hands, flatten dough and put into a 9x13" baking sheet, building up a ?" edge on all sides. Chill. Bake the crust for 15-20 minutes until very light brown. Let cool on a wire rack. Leave oven on. For the filling, whisk together the eggs, sugar, zest, juice, and flour. Pour over baked crust and bake for 30-35 minutes or until filling is set. Let cool to room temperature. Cut into triangles and dust tops with confectioner's sugar.

Chocolate Chip Cheese Ball

1- 8 oz. cream cheese, softened
1 stick butter, softened
1/2 cup chopped pecans, finely chopped
2 Tbsp. light brown sugar
3/4 cup powdered sugar
1 tsp. vanilla
3/4 cup mini semisweet chocolate chips

Combine all ingredients (except choc. chips) in a bowl, much like you would a cookie dough. Refrigerate for at least half an hour. Take out mixture, form into a ball, then roll it in the choc. chips. Refrigerate again until ready to serve. Serve with graham crackers, vanilla wafers, or shortbread cookies.

Not Yo Mama’s Banana Pudding

2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas
2 cups milk
1 (5-oz) box instant French vanilla pudding
1 (8-oz) package cream cheese, softened
1 (14-oz) can sweetened condensed milk
1 (12-oz) container thawed Cool-Whip, or sweetened whipped cream

In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Set aside.

Line the bottom of a 13x 9x 2” dish with 1 bag of cookies and layer sliced bananas on top.

Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

no bake oreo balls
a package of oreos, a packet of cream cheese, and chocolate
blend oreos in a blender until they are like powder then mix with the packet of cream cheese until it looks well mixed.
roll into 1 inch balls and put in the fridge for 30 min
then melt some chocolate and cover the oreo balls, enjoy!

Banana pudding is great for potlucks... everyone loves it. Add sliced bananas and vanilla wafers to make a pretty layered dish in a nice glass bowl. Simple and delicious.

Easy Lemon Bars

Ingredients:
1 (1 lb. 4-oz.) pkg. Pillsbury Refrigerated Sugar Cookies
4 eggs, slightly beaten
1 1/2 cups sugar
1/4 cup flour
1 teaspoon baking powder
1/4 cup lemon juice
1 to 2 tablespoons powdered sugar

Heat oven to 350 F. Press cookie dough evenly in bottom of an ungreased 13x9-inch pan. Bake at 350 F. for 15 to 20 minutes or until light golden brown. In large bowl, combine eggs, sugar, flour and baking powder; blend well. Stir in lemon juice. Pour mixture over warm crust. Bake at 350 F. for an additional 20 to 30 minutes or until top is light golden brown. Cool completely. Sprinkle with powdered sugar; cut smaller square bars.

oreo dirt pie, 7 layer jello

Frog eyed salad(don't let the name fool ya this is delicious)

INGREDIENTS
1 cup white sugar
3 egg yolks
2 tablespoons all-purpose flour
2 cups pineapple juice
1 tablespoon lemon juice
1 (16 ounce) package acini di pepe pasta
2 (20 ounce) cans pineapple chunks
2 (11 ounce) cans mandarin oranges, drained
3/4 cup maraschino cherries, chopped
1 (16 ounce) package miniature marshmallows
1 (12 ounce) container frozen whipped topping, thawed

DIRECTIONS
In large saucepan over low heat, combine sugar, egg yolks, flour, pineapple juice and lemon juice. Stir and cook until thickened. Remove from heat.
While sauce is cooking, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
In large bowl, combine cooked mixture with pasta and toss to coat thoroughly. Refrigerate 8 hours or overnight.
Toss pasta with pineapple, mandarin oranges, maraschino cherries, marshmallows and whipped topping. Refrigerate until serving.

My sister and I bring this to all the potlucks and so far we always bring home an empty dish

Well depending on how many are going to be there I would make mini pavlovas and bring different chopped up fruits for them to top it with. Or a pie is good too, coffee cake, brownies jazzed up some how. Last potluck party I went to we brought peaches and pineapple and nutella then grilled the peaches and pineapple some and topped with chopped up hazelnuts and nutella, it was a hit.

"dump cake"...in a large baking dish, pour a large can of pie filling (cherry, strawberry, etc). On top, pour a yellow cake mix. do NOT stir it in just pour it on top. Add a 16 oz can of crushed pineapple and chopped pecans (about a half cup). bake for about 45 minutes. This is delicious. (you can do a google search for "dump cake recipes", there are hundreds of recipes to choose from.

English Trifle to Die For

A traditional English trifle all children in the UK grow up eating on high days and holidays.

PREP TIME 15 Min
COOK TIME 30 Min

INGREDIENTS
1 (9 inch) sponge cake, cut in cubes
1 cup seedless raspberry jam
8 ounces fresh raspberries

10 fluid ounces heavy cream
3 egg yolks
3 tablespoons white sugar

10 fluid ounces heavy cream
2 ounces sliced almonds


DIRECTIONS
Spread a little jam on each piece of cake and place in the bottom of a large glass bowl. Sprinkle raspberries over cake.
Heat 10 fl. oz. cream in a medium saucepan over medium heat. While the cream is heating, beat the egg yolks with the sugar until pale yellow and smooth. Strain yolk mixture into a clean bowl. Pour hot cream into egg yolks and stir vigorously. Return mixture to pan over low heat and cook, stirring, until thick enough to coat the back of a metal spoon. Remove from heat and allow to cool.
While custard is cooling, whip 10 fl oz. cream until soft peaks form. Place almonds on a baking sheet and toast, in a 300 degree oven or toaster oven, stirring frequently, until golden, 2 to 10 minutes.
Spread cooled custard over cake in bowl. Top with whipped cream and toasted almonds. Chill 2 hours before serving

Banana pudding
3/4 cup sugar
1/2 flour ( plain)
dash of salt
3 cups milk
1 beaten egg
1 teaspoon vanilla
3 tbls butter
3 bananas
1 box vanilla wafers

combine first 4 ingredients,and heat over low heat stirring constantly...when milk is hot slowly add 1 cup to beaten egg...then return egg to hot milk.....continue to stir till thick.
remove from heat ...add butter & Vanilla

line bottom of dish with vanilla wafers...next the slices of one banana...top with pudding..repeat and end with pudding.


This is a great recipe....the sweetness comes more from the bananas and cookies than the pudding.

To make chocolate pudding....up the sugar to one cup.and add 1/3 coco powder.

If it is really just potluck, Rice Krispy Bars are always a winner. The recipe is on almost every box of cereal.

Fruit & Cookie Trifle - This is how I make my trifles.

Crush a few digestive biscuits with a rolling pin on some foil.

In a little dob of butter, brown them a teeny bit ( not dark) just to bring out the smell and taste of the cookie crumbs.

Press this down into a clear, glass, oblong oven dish, making a layer.

Open a can of mixed diced fruit, remove syrup ( keep this in a dish) and spread the fruit over the crushed cookie crumbs.

Now make some jelly.. add one glass of hot water to the jelly powder, stir till dissolved, then add 1 and 1/2 cold water but- replace some of this with the syrup, for example, if you have one glass of syrup just mixed it with 1/2 glass of cold water etc.. mix it all well. Pour over the cookie crumbs and fruit.

Leave aside for about 5 minutes so the cookie crumbs can absorbs some of the jelly. Then refrigerate to set.

When the jelly is set about an hour or so later, make some custard, when it is luke-warm, pour over the set jelly layer ( it might melt a little- this is fine. Then decorate with cherries ( the ones in syrup in the cake section) and keep in fridge till ready to serve.
