Make sure you let the batter rest for at least 5 minutes before pouring it on the griddle - what a difference! Your pancake will be light and fluffy if the baking powder or soda have time to work before cooking.

Use a grill not a pan. Cook on low heat so it won't burn.

the right consistency of batter, and the right cooking temp. are important. Usinig a griddle is better than a pan. Good luck
