What is the purpose of ale in steak and ale pie?!
Answers: Despite eating this dish in many publington, I have yet to taste the ale. Should I be able to? Is there a pub in the North of England where I can?
Guiness is the most popular, though Murphy's will work as well. It serves two purposes--to tenderize a cheaper cut of meat and to provide a base for the rich brown gravy. The ale both intensifies the flavor of and tenderises the meat. It cannot be tasted by itself.
if cooked properly it is a full rich flavour, yes the alcohol sadly evaporatesbut there is so much flavour in proper ones. i always cook guiness and steak pie yum!!!
the purpose of ale is to enhance the flavour of the steak, you do not really taste the ale and all alcohol is evaporated during cooking , a good steak and ale pie you should not be able to taste the ale it should be subtle, it is just used to enrich the flavour
it adds flavour both to the gravy and the meat. it also makes the meat tender.
