Question: Its not as rare as Beef Welling is normally served, because my husband and I do not prefer that way. Also, I didn't have an onion on hand, so I did without. So, what can I do medium done, onionless, leftover Beef Wellington?

Take off the crust and throw it away. Then you can cut the meat into little medallions - they would make great steak sandwiches on buttered toasted french bread.

Toss the crust, and cut up the meat to make bbq beef sandwiches. Saute 1/2 a sliced onion with 1 clove of chopped garlic in 1 tbsp of oil, add sliced or shredded beef, stir for 1 minute, then stir in 3-4 tbsp barbecue sauce. Remove from heat and serve on toasted kaiser rolls, or wrap in a soft tortilla. You can add some sharp cheddar, or just some lettuce and tomato for a great sandwich.
