I would use an ale, something medium flavoured, so that you do not overpower the taste of the perch.

I would say whatever beer you have onhand would work. One for the batter and one for you!

Rule of thumb when cooking with beer: use whatever beer you like to drink. It helps if you let it sit out and get flat, but only because it foams up less when you mix it in the batter. If you don't feel like making the batter from scratch, boxed pancake batter is absolutely delicious. I wouldn't worry about the beer flavor overpowering the perch flavor...you don't use so much that beer is all you taste anyway.

the perfect beer batter does not come from beer at all. substitute seltzer water for beer. trust me

any beer would be fine, even spakling water does the trick. the important part of it all is that it is very super ice cold!!!
