Hi Pinkki
red onion pickle or chutney
the pickle is made by slicing red onions and adding vinegar black pepper [ground] a couple of teaspoons of sugar, 2 or 3 bay leaves, cardimum seeds [pods soaked till soft and remove seeds add to mixture ] a pinch of paprika or a seeds from a medium chilli [the small ones are the hot ones] depending on how mild or hot you want it, leave in jars for at least a week and then enjoy
chutney is ,1 pint malt vinegar 20 oz sugar [16 oz castor 4 oz good brown sugar] add 1/2 a teaspoon of cumin and caraway seed bring to a simmer and reduce by 1/2 or untill you have a goods thick syrup, dont boil it will flow over the saucepan and leave a sticky mess just simmer, it may take 1/2 to 3/4s of an hr , tip here DO NOT SMELL VAPOURS it clears your nose quicker than a F 10 fighter jet, slice 4 or 5 red onions and put into the syrup while still warm not hot, you want the onion to have a bit of a crispy bite to them, stir till well mixed put in jars , seal and leave to cool. this is a basic recipe, you may find indian cook books do the same but with different ingredients try under accompanyments.
all the best Roy
