What a good son you are.
Well I love Crepes, when I make them I normally just serves them with powdered sugar and lemon juice. But there are tons of good recipes. One thing you should always have with crepes is Fruit(berries of some sort), and hot fudge:)
Ill be sure to include a bunch of links and photos of the ones that look yummy:)

Along side the crepes, you could serve eggs benedict, fruit, and a bit of Canadian bacon.

Fresh fruit with cottage cheese.
Have a crepe full course: all the side you need is mimosa~
Appetiser crepe like crepe florentine, main dish crepe like cheese and sausage crepes, and here is one for dessert.
Banana Crepes - it's a french crepes filled with a sweet cream sauce over bananas and topped with whipped cream.
PREP TIME 5 Min
COOK TIME 15 Min
INGREDIENTS
1 cup all-purpose flour
1/4 cup confectioners' sugar
2 eggs
1 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup butter
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup half-and-half cream
6 bananas, halved lengthwise
1 1/2 cups whipped heavy cream
1 pinch ground cinnamon
DIRECTIONS
Sift flour and powdered sugar into a mixing bowl. Add eggs, milk, butter, vanilla, and salt; beat until smooth.
Heat a lightly greased 6 inch skillet. Add about 3 tablespoons batter. Tilt skillet so that batter spreads to almost cover the bottom of skillet. Cook until lightly browned; turn and brown the other side. Repeat process with remaining batter, grease skillet as needed.
Melt 1/4 cup butter in a large skillet. Stir in brown sugar, 1/4 teaspoon cinnamon and nutmeg. Stir in cream and cook until slightly thickened. Add half the bananas at a time to skillet; cook for 2 to 3 minutes, spooning sauce over them. Remove from heat.
Roll a crepe around each banana half and place on serving platter. Spoon sauce over crepes. Top with whipped cream and a pinch of cinnamon
For the crepes I would use cream cheese and a fruit that really sticks out like strawberries, cherries, or blueberries, or whatever your mom's favorite fruit is. But with any fruit make sure you taste them before use because you need to make sure that they are sweet and delicious lol. For the side dish I would actually make the crepes the side dish and make it one bug breakfast. Make scrambled eggs, bacon and toast and then make the crepes the dessert. After all it's her birthday and its probably the only time of the year where she'll actually eat more than she needs lol!
