What to do with Apple Butter?!

Question: I have a huge gar of apple butter and I don't know what to do with it. I'm the only one who likes it in my house but I could never finish this jar. Anyone have any ideas on what I can make with it?

Apple Butter sounds good!!!!!!!

It's good on toast, waffles, pancakes, or use it to put on crackers with some grapes.

You could make an apple pie and coat the inside of the crust with the apple butter. I have done this before and it makes the crust taste wonderful besides the natural juices from the apples.

You can also use some up making Apple Spice Cake...see below. This was a staple in our house. YOu'll love it if you like gingerbread.

Makes 12 servings
1 cup apple butter
? cup buttermilk (or regular if that's all you have)
1/3 cup molasses
? cup vegetable oil
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
? cup packed dark brown sugar
1 tablespoon ground ginger
2 teaspoons cinnamon
1 teaspoon allspice
? teaspoon ground cloves
2 teaspoons baking soda
? teaspoon salt

Preheat oven to 350°. Lightly oil a 7-by-11-inch baking pan or coat it with cooking spray. Set aside.

In a large bowl, whisk together the apple butter, buttermilk, molasses, oil, egg and vanilla.

In another bowl, stir together the dry ingredients.

Stir the dry ingredients into the apple butter mixture just until well combined.

Scoop the batter into the pan, smoothing the top with a spatula. Bake for 35 to 45 minutes, or until the cake feels firm when lightly pressed in the center and a skewer inserted in the center comes out clean. Let cool in the pan on a rack for 10 minutes. Cut into 12 squares to serve.

Eat it on toast. I also mix it in with plain, non-flavored yogurt. It's good.

Apple butter is a great topping for pancakes. I make a stack of 3 pancakes with a little butter in between each pancake, then top with more butter and a generous amount of the apple butter. This is sooo good. It's also great on hot cinnamon rolls. My mom used to make the best apple butter. I love it and it's very good for you. Enjoy.
