Question: OK, so, my boyfriend is coming over after school and im making him supper. . I was thinkin Italian spaghetti but I want something better...but fairly inexpensive... any ideas? recipes?

Ok, I found this AMAZING recipe that is very inexpensive!!! It's Lemon Garlic Shrimp Pasta. Here's the recipe:

24 medium shrimp, peeled and de-veined
1 lb linguine
3 tablespoons extra virgin olive oil
3 tablespoons real butter (unsalted)
1 tablespoon italian seasoning
3 fresh garlic cloves, finely chopped
salt
fresh coarse ground black pepper or lemon pepper seasoning
2 tablespoons sesame seeds (optional) (I DIDN'T USE THESE)
1 fresh lemon
lemon zest



1. 1. Boil pasta in salted water; remove from heat just before pasta reaches al dente.
2. 2. Heat skillet on medium; add olive oil & garlic, When heated thru add shrimp & Butter - cook for 2 minutes and add lemon zest. Gently toss shrimp with garlic until shrimp turns pink. Remove from heat.
3. 3. Drain pasta; return to pan.
4. 4. Add shrimp, garlic, butter, olive oil, Italian seasoning, sesame seed, salt and pepper (or lemon pepper seasoning, if you prefer) - to taste.
5. Toss well with fresh squeezed lemon juice and serve immediately with salad and Italian bread.



I know that it sounds hard and expensive, but trust me it's really not. The most expensive thing is the shrimp, and at some grocery stores that will have then on sale. Good luck!!! And happy eating!!! =)

*PEPPER, OLIVE & CHEESE SPREAD


Preparation time: 30 min
Yield: 2 cups


Spread Ingredients:

1/2 cup freshly grated Parmesan cheese
4 ounces (1 cup) LAND O LAKES? Mozzarella Cheese, shredded
1 (8-ounce) package cream cheese, softened
2 tablespoons finely chopped fresh parsley, rosemary and/or thyme leaves
1/2 teaspoon coarsely ground pepper
1/3 cup roasted red bell pepper pasta or spaghetti sauce
1/3 cup chopped pitted kalamata olives
Chopped parsley, if desired
Fresh rosemary sprigs, if desired


Crackers Ingredients:

Crackers or crusty bread slices


Combine Parmesan cheese, mozzarella cheese, cream cheese, herbs and pepper in large bowl.

Spread cheese mixture to 6-inch circle on 9-inch serving plate. Cover; refrigerate until serving time.

Just before serving, spread pasta sauce over cheese mixture, leaving 1/2-inch around edge. Top with chopped olives. Garnish with parsley and rosemary, if desired.

Serve with crusty bread or crackers.


*CRUNCHY CHEESE-STUFFED CHICKEN


Preparation time: 15 min Baking time: 20 min
Yield: 4 servings

(4-ounce) boneless skinless chicken breast halves
2 ounces LAND O LAKES? Cheddar Cheese, cut into 4 (2x1/2x1/2-inch) strips
1/2 cup cornflake crumbs
1 ounce (1/4 cup) LAND O LAKES? Cheddar Cheese, shredded
1 teaspoon seasoning salt*
1 egg, beaten


Heat oven to 400°F. Cut a 3-inch slit in each chicken breast half to form pocket. Insert 1 strip cheese into each pocket. Secure each pocket with several toothpicks.

Combine crumbs, shredded cheese and seasoning salt in pie pan or shallow bowl. Place beaten egg in another pie pan or shallow bowl; dip chicken in egg. Lightly press both sides of chicken in crumb mixture to coat.

Place chicken onto greased baking sheet. Bake for 20 to 25 minutes or until chicken is no longer pink.

TIP: To make ahead: Prepare the chicken as directed above. Wrap each serving in plastic food wrap. Place in a resealable plastic freezer bag; freeze. Thaw. Bake as directed above.

*Substitute 1 teaspoon garlic salt. Recipe Tip
