For non-mexican people in US and anywhere: What Mexican dishes do you prepare at home or eat regularly?!

Answers: I have noticed that people in US is making enchiladas, adobos, driking Corona beer, etc. at home, I am just curious to know how much has Mexican cuisine influence home cooking in the US.

I eat mexican food about 3-4 times a week. I love it!
Today I made spinach quesadillas
I usually make chicken or beef enchiladas
Taco Salad
Chicken fajitas with onions and peppers
Chicken tortilla soup
Tacos and Burritos
Nachos (bean and cheese)
Spinach quesadillas:
-Saute spinach and onions in pan
-Place one tortilla in a non stick sprayed pan, top with your favorite cheese (I like monterey jack) and the spinach mixture
-Top with a tad more cheese and place 2nd tortilla on top
-Cook on both sides until middle is melted and sides are slightly brown
Serve with sour cream!
Beef and Cheese enchiladas:
-Heat 2 inches deep of vegetable oil and chili powder on medium heat
-Dip yellow corn tortillas into hot oil until they won't stand up in shape
-When finished with all tortillas, roll with grated fiesta cheese (or colby jack)
-Place rolled tortillas in glass dish
-Pour a heated can of Wolf chili over tortillas
-Top with grated cheese
-Cook until cheese is melted
Serve with sour cream!

In California everyone eats Mexican food, especially tacos.
We have tacos alot. Taco bell sells the shells and seasoning in grocery stores now. Thats the only one I'll buy. We also love the white cheese dip, and I fry tortillas instead of buying chips, they are way better! I make nachos with the meat, green onions and salsa a lot to. Lets see we eat a lot of chili, I make a big pot the first day we have straight chili, the second day we have chili dogs with slaw pic etc, 3rd we have the rest on spaghetti with a mound of cheddar cheese on top. Sometimes we have Frito pies with cheddar too.
Well, I'm a lover of hispanic food. I prefer gorditias, churros, enchiladas, empanadas [spelling probably wrong], and i love adding mexican spices to every day food like eggs or nachos.

i'm black and i love mexican food enchilada's,tacos mostly everything even menudo. i just love it.
um...my family's chinese, so we barely ever eat anything at home but rice and chinese food. but once my mom made fajitas, and occasionally we eat mexican food at mexican restuarants. oh yeah...we eat a lot of tortilla chips if that counts :)
Frozen tamales every couple of months, chili a lot more than that. I love to go out for Mexican & margaritas, but we don't do that more than a couple of times a year. Sadly.

A lot! I grew up in Texas and we lived on tex-mex restaurants. Tons of enchiladas, tacos, tostadas, fajitas, and I would always beg for sopapillas (I think I spelled that wrong). Now, I don't eat out as much, but I make tacos, tostadas and enchiladas at home. Oh, and Corona's my second choice beer, after Sapporo. That last one can be tough to find, so Corona rules the fridge right now. Yeah, we love Mexican food in the states, especially Texas and California.
By the way, if anyone knows any great recipes for something other than the tacos, tostadas and enchiladas, please post!!! The Mexican food I make really doesn't match up to the restaurants.

Tacos, quesadillas, enchiladas, breakfast burritos. We eat mexican at least once a week.
We make tacos about once a week, and we regularly make chili con carne', enchiladas and burritos. When we eat Mexican food at a restaurant, we try to order things we don't know how to make at home. I love all the wonderful spices used in Mexican cuisine. And don't forget the most important thing - Margaritas!
I make some thing mexican at least a couple times a week. Between taco sauce, taco flavor, cilantro, cumin, tortillas, salsa, jalapenos- at least one of these makes an appearance almost every single night. I gave up ketchup & pickles on burgers--now I use taco sauce & jalapenos.

i love mexican food!! tacos...enchiladas..salsa..guacamole...f... yummy!!1 cup finely chopped onion
1 garlic clove, minced
1 teaspoon canola oil
1 cup dried lentils, rinsed
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
2 1/2 cups chicken broth
1 cup salsa
12 taco shells
1 1/2 cups shredded lettuce
1 cup chopped fresh tomato
1 1/2 cups shredded reduced-fat Cheddar cheese
6 tablespoons fat free sour cream
DIRECTIONS
In a large nonstick skillet, saute the onion and garlic in oil until tender. Add the lentils, chili powder, cumin and oregano; cook and stir for 1 minute. Add broth; bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until the lentils are tender. Uncover; cook for 6-8 minutes or until mixture is thickened. Mash lentils slightly.
Stir in salsa. Spoon about 1/4 cup lentil mixture into each taco shell. Top with lettuce, tomato, cheese and sour cream. dont forget the homemade guac!!..just get 1 avacado...lemon juice, garlic powder, canned tomatoes, mayonaise and salt..yum!
Mexican cuisine has influenced the American pallet more than people think......It comes in as number 1 in ethnic cuisine in the US today......This you will especially find in the Southwest, but I'm sure that local demographics will show that most supermarkets have at least 20 varieties of salsa alone....Here in Southern California we have supermarkets that are EXCLUSIVELY ALL Hispanic products, produce etc. Hispanic culture is alive and thriving here, and if you visit California, you'll notice more places to get Mexican (all types, from Baja to Border to Pastor to Central Mexican, all of which is different from preparation technique to local indigenous ingredients common to each region. Did you also know that the number one condiment in the United States is (and has been for over 15 years now) Salsa?? It beats out even ketchup, which was a staple condiment until salsa knocked it from the top notch......So, yes, the Mexican culture has tremendously impacted our way of life, especially in the culinary arena......
ADDENDUM:
What do I make??? OK, I'll fess up.......even though I'm professionally trained, here in So Cal, why would I bother to cook when the Mexican folks that prepare the food in the TONS of restaurants around here (we have 4 within a 5 block radius) can do it so much more authentically (and cheaper than I could to buy all the ingredients, spices and sauces, etc). So, when the Mexican food bug bites, we go out.....But I do make a mean chili...........And yes, I'll give out the recipe.....
