Recipe for a healthy Delicious Salsa?!


Question: Try my signature recipe..
3 mangoes
1 small red onion
1 red pepper
1 orange pepper
1 jalapeno (seeded if you don't like it hot, or you can add more if you like spice...I add 2-3)
3 tb cilantro
4 Tb lime juice
2 Tb lemon juice
salt to your liking and add sugar if it's too spicy for ya...

my little twist on regular salsa..also good on chicken or fish

Salsa

5 large tomatoes -- chopped
1/2 cup green onions (or yellow onion) --chopped
1 1/2 tbsp. jalapeno (or to taste) -- veined, seeded and chopped** (use less to decrease hot!)
1 tbsp. lime juice
1/2 small bunch cilantro -- chopped
Salt and pepper to taste
**CAUTION: The oil from pepper skins can burn your eyes or skin. Wear gloves or wash your hands after handling hot peppers.
Combine all ingredients and refrigerate.
Makes: 3 cups

Tomatoes, red onion, little garlic, red and green peppers, fresh cilantro, evoo and lime juice.

You don't need a recipe all you need is a chef's knife and a grapefruit spoon
Using a chefs knife cut your ripe Roma tomatoes in half from the top to the bottom
Using your grapefruit spoon scoop out the seed package and discard
Using the palm of your hand flatten out the tomato
Stack 2-4 flattened tomato halves and make a small dice 1/4'X1/4"
Repeat as needed
Dice a 1/2 a red onion the same size
Dice 2+ cloves of garlic 1/8 x1/8 -a Chinese cleaver is the preferred tool for doing this
Cut a couple of jalepeno peppers top to bottom
Using a grapefruit spoon remove and reserve the seeds -follow all safety precautions
Flatten w/hand /stack and cut 1/8 x1/8
Coarse chop cilantro -no stems
Add lots of lime juice
Salt to taste
Enjoy

quick and easy salsa
1 large can whole tomatoes
2large cloves garlic , minced
juice of 1 large lemon
salt pepper to taste
Jalapeno slices
tabasco slices
a splash of vinegar
place everything in a blender and blend on medium high untl
well blended.
I like it blended longer so it is runnier like the salsa served in restaurants.
or Pico de Gallo, dice up 1 onion, 1 tomato, a bunch of fresh cilantro, chopped, 1clove garlic , minced, mix together in bowl and squeeze the juice of two large limes over this, stir well.
I like to pour a little of the salsa over the pico.

Fresh Tomato Salsa
Yield: 3 cups


3 md Tomatoes, seeded, chopped, (about 3 cups)
1/2 c Sliced green Onions (w/tops)
1/2 c Chopped green bell pepper
2-3 T lime juice
2 T Snipped fresh cilantro
1 T Finely chopped jalapeno
1 T Finely chopped garlic, (about 3 cloves)
1/2 t Salt
l T chili powder (optional)
1 T Cajun spice powder (optional)
Mix all ingredients.



Author’s Notes: Here is the all-purpose southwestern favorite. This simple salsa is unbeatable when tomatoes are at their brilliant best. If time permits, refrigerate the salsa for two or three hours before serving, so that flavors of the individual ingredients “marry”. Serve it with any of the tortilla dishes, grilled chicken or hamburger, or tortilla chips.”
