In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.
I always get assigned to fix the potato salad at family gatherings...First the red potatoes are better for this as well as mashing. White potatoes or more gritty and fall apart easier in the water. OK for a large bowl,
8 good size potatoes peeled and diced
Water
salt/pepper
1 T sugar
2 T oil
Cover potatoes with water, salt/pepper, sugar & oil. Boil about 20 min on med low. Drain. This is where the difference in texture comes in, if you want all smooth the you must beat right away don't eve wait 3 minutes! Or if you want chunky then just let them cool in the strainer. When they get cold they will not smash up smooth!!!
Some miracle whip
2 glops or big spoons
2 big T of yellow mustard
4 or 5 green onions diced fine
sweet pickles diced fine
lot of juice from the pickles too (you can use sweetened vinegar if you don't have enough juice.)
1/2 bell pepper chopped fine
1/4 cup of celery chopped fine
1/4 c of red onion chipped fine
6 eggs boiled eggs chopped medium save one!
salt/pepper
paprika
Fold everything except the eggs in your potatoes don't stir hard. Fold in 5 chopped eggs. Taste them now, add more pickle juice (not mayo) & mustard to give it that something, something it needs. Add some salt/pepper just keep adjusting till its right. It's the pickle juice that makes it! Make a flower out of one egg & put in the center of your bowl. Sprinkle with paprika...
Use the one you make now, only add mustard it, some pickles and some fine chopped onions When I say add mustard, make sure you can tell the change in the color of the mixture to the light yellow color, give da tators a whisk and viola...You gots tator salad
1 small onion diced fine
3 stalks celery diced fine
1/2 cup finly diced dill pickles
1 cup Mayo
1/3 cup mustard
Pickle juice
dash of celery seed
6 hard boiled eggs sliced
5 pounds potatoes cooked till tender
salt & pepper to taste
