One recipe i love is oven "fried" chicken strips

Ingredients:
pound of skinless/boneless chicken breasts; cut into strips
honey mustard
Quaker Oats ( crushed in blender)

Pour honey mustard into a plate and the Quaker Oats into another plate;

Cover the strips with mustard and then with the oatmeal.

Bake in oven at 400 degrees for 20 to 25 minutes.

This recipe is a great alternative for fired chicken and tastes amazingly wonderful.
The mustard replaces the egg wash and the oatmeal is a healthy alternative to bread crumbs or flower.

A great side is oven baked potatoes;
Ingredients:
2 idaho potaotes; peeled and sliced
salt and pepper

sprinkle the potatoes with salt and pepper and any other seasoning you'd like and bake in oven for 400 degrees for 25 minutes

Broccoli Cheese Chicken - serves 4

Preparation - 15 minutes, cooking time - 20 minutes.

4 boneless skinless chicken breast
1 can Broccoli & Cheese soup
3/4 lb rice
1 tbsp butter
Cooking spray
1/2 cup milk

Begin cooking rice according to package directions.
Spray a 10-inch skillet with cooking spray and add butter to melt.
Cut chicken breasts into cubes; place in heated pan. Cook chicken until white on all sides Drain off butter and chicken on paper towels.
Spray more cooking spray onto drained skillet. Add chicken back to skillet on low heat.
Add soup and milk to skillet. Cover and simmer about 10 minutes or until heated through; stirring as needed.
Pour mixture over rice and serve.

Much like Chicken Saltimbocca, this is chicken smothered in parmesan cheese and rolled with mozzarella and prosciutto and baked in white wine.

PREP TIME 15 Min
COOK TIME 30 Min

INGREDIENTS
4 skinless, boneless chicken breast halves
1/2 cup shredded Parmesan cheese
1 clove garlic, finely chopped
4 teaspoons butter
4 ounces thinly sliced prosciutto
10 ounces sliced whole milk mozzarella cheese
1/3 cup white wine
1/4 cup olive oil
1 pinch black pepper

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
Pound chicken breasts flat, and lay them on work surface. Sprinkle liberally with Parmesan cheese on both sides. Place a pinch of minced garlic and 1 teaspoon butter in the center of each breast. Cover each breast with a layer of prosciutto and mozzarella cheese. Reserve some of the prosciutto to place on top of the chicken. Roll up each chicken breast, and secure with toothpicks.
In a 9x13 inch baking dish, combine white wine and olive oil. Arrange chicken rolls in dish. Place a small piece of prosciutto on top of each roll, and sprinkle with pepper.
Bake in preheated oven for 30 minutes, or until chicken is no longer pink, an juices run clear

A lot of times, I will check out soup labels at the store. Rice, Chicken, and cream of mushroom souped baked are good and it can be found on the Campbell's label. Sometimes it looks kinda nerdy to be reading labels but I've found some good recipes for my family that way.

I like mine fried. To make it healthier, remove the skin, then wet the chicken pieces. Coat with seasoned flour. Pour 3 to 4 tbl oil into a cookie sheet with sides or a shallow baking dish. Make sure the oil coats the pan well. Place the chicken pieces, flat side down, in this pan. Bake at 350 degrees Fahrenheit for about an hour, turning halfway through. This gives a crispy coating to your chicken without very much oil at all. If you're using boneless chicken, cut the baking time approximately in half.

dice potatoes and lay them out on pan sigle stacked. pull back skin on chicken and sprinkle seasoning of your choice. lay skin back as it was then sprinkle a little more seasoning. lubricate chickent with lowfat oil(this keeps the spices on the outside from burning). lay out chicken pieces on top of potatoes in the pan. bakea at 450 degrees until chicken is done depending on the cut. chicken will be crispy instead of soggy like most baked chicken. potatoes will be crisp and will have absorbed alot of flavor from the chicken drippings
