Chili Weekend Concoction

1 1/2 ground beef
1 onion, chopped
1 can (10 oz.) tomatoes and green chilies
2 cans (15 1/2 oz.) chili beans in gravy
1 can (10 3/4 oz.) condensed mushroom soup
1 1/2 cups grated cheddar cheese
1 pkg. (12 oz.) corn chips
1 teaspoon chili powder, optional

In colander, cook beef and onion for 6-9 minutes, covered, on High power (100%). Place drained hamburger into 3 quart casserole. Add tomatoes, soup and beans. Simmer for 3-5 minutes on High power (100%), uncovered. In large rectangular casserole layer meat mixture, cheese and chips. Repeat, ending with chips. Cook, uncovered, for 8-10 minutes on Medium power (50%).

Sloppy Joes

1 lb. lean ground beef
1/2 cup chopped onion
1/3 cup catsup
1 tablespoon brown sugar
2 teaspoon vinegar
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
4 hamburger buns

Combine onion and beef in colander, if available, or microwave casserole. Cook on High power (100%) for 3-5 minutes, stirring once or twice, to crumble the beef. Place drained onion and hamburger mixture into 2 quart casserole. Add the remaining ingredients, except for the buns. Blend well and heat on High power (100%) for about 3 minutes, or until very hot and heated through. Spoon meat mixture onto buns and serve.

EAGLE BRAND CHOCOLATE FUDGE
12 oz. semi-sweet chocolate chips
1 can Eagle Brand milk
2 heaping tbsp. peanut butter

Place chocolate chips and milk in microwave safe bowl. Cook on high for 5 minutes. Remove from microwave, stir in 2 heaping tablespoons of peanut butter. Spread in pan. Cool and cut.

sour cream chicken breasts
4 skinless, boneless chicken breasts
12 ounces sour cream
1/4 cup grated Parmesan cheese
1/3 cup white wine
1/4 cup chicken broth
1 pinch salt
1 dash lemon pepper

DIRECTIONS
Simmer chicken breasts in water to cover until almost tender. Drain, and reserve broth.
In a microwave-safe dish, mix together sour cream, parmesan cheese, white wine, chicken broth, salt and lemon pepper.
Cut chicken into bite size pieces, and put in sauce mixture. Cover. Microwave on High for about 10 to 15 minutes, then on Low for another 5 minutes. Make sure it doesn't burn. When sauce starts to thicken and chicken is tender, it is done!

Fiesta Cheese Rice

I usually serve this spicy rice side dish alongside chicken enchiladas or tacos for a great Mexican meal


INGREDIENTS
3 cups uncooked instant rice
3 cups water
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 tablespoon chicken bouillon granules
3/4 cup sour cream
1 1/2 cups shredded Cheddar cheese, divided

DIRECTIONS
In a bowl, combine the rice, water, tomatoes and bouillon; mix well. Pour into a greased 2-qt. microwave-safe dish. Cover and microwave on high for 10 minutes. Stir in the sour cream and 1/2 cup of cheese; mix well. Sprinkle with the remaining cheese. Cover and microwave for 1 minute or until cheese is melted

get Parchement Paper.. NOT WAXED paper..

Pull off 1 sheet that is about 16 to 20 inches long, fold it in half. crimp 3 sides so that you have a pouch.. fill pouch with stuff like:

chicken, carrots, corn a little wine or beer, herbs. seal pouch and poach for about 7 to 10 minutes..

you can do endless "healthy" cooking this way.. even deserts..

meat is difficult, so don't bother. Veggies are ok, you can either buy the prepackaged type or fresh.
I would try using it to cook the veggies and adding store bought rotisserie chicken or deli meats, with some simple "sauces" (melt butter and minced garlic in the micro, or jar marinara sauce, or sweet/sour sauce, ect).
You can also get rice and pasta already cooked and microwavable to add to you vegetables, meat and sauce

Death By Chocolate

1 box chocolate cake mix
1 12 oz. pkg. chocolate chips
1 small pkg instant chocolate pudding
1 1/2 c. milk
2 eggs

Mix all ingredients together in a 3 qt. casserole. Let stand 10 minutes. Microwave on High for 13 minutes. Turn casserole over on a plate to serve - the chocolate chips will sink to the bottom and melt, making a "frosting."

Another oldie, grilled cheese sandwiches using an iron.
