Tonight we are having pancakes but meatloaf, baked chicken breasts or pork chops, chili - none of these take that much time to prepare.

The Perfect Buttermilk Pancakes
about 14 pancakes
Prep: 10 minutes
Cook: 3 minutes

Ingredients
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
1/3 cup milk
2 large eggs
1/4 cup butter, melted
Butter, vegetable oil or shortening, for frying
Pure maple syrup and additional butter (optional)

Directions
1. Heat oven to 200 degree F. Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk until blended. Combine buttermilk, milk, eggs and melted butter in a medium bowl. Whisk until blended.

2. Heat a large nonstick griddle according to the manufacturer's instructions. (Or heat a nonstick skillet over medium-high heat.) When griddle is hot, add buttermilk mixture to dry ingredients; vigorously mix batter with a wooden spoon just until blended. If lumps of flour are visible, that's okay.

3. Reduce heat to medium and grease griddle with butter, oil or shortening. Using a ladle or a 1/3-cup dry measure, pour spoonfuls of batter a few inches apart onto the hot greased griddle. Cook until small bubbles begin to form on the top and some pop, 2 to 3 minutes. Carefully turn pancakes with a flexible spatula, then cook 1 to 2 minutes more, until golden brown. Serve immediately with maple syrup and additional butter, if desired (or keep pancakes warm in oven). Repeat process with remaining batter. Makes about 14 pancakes.

Tip: The secret to light and tender pancakes begins with one simple ingredient: buttermilk. Instead of folding beaten egg whites into the batter (a common method for fluffing up pancakes), we used buttermilk for a melt-in-your mouth stack. And our techniques? 1. Don't over mix the batter or the cakes will toughen. 2. Though pancakes are terrific right off the griddle, you can cook all the batter at once. Keep cakes warm in the oven and serve when you're ready to sit down.

Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots.

Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Baked pork chops or chicken breasts:

Marinate them in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.

Chili
Prep: 15 minutes
Cook: 20 minutes

Ingredients
1 pound lean ground beef
1/2 cup chopped green sweet pepper (1 small)
1/2 cup chopped onion (1 medium)
4 cloves garlic, minced
1 packet chili seasoning mix
2 15-ounce cans red kidney beans, undrained
2 15-ounce cans spicy chili beans, undrained
2 14.5-ounce can diced tomatoes, undrained
4 to 6 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon dried basil, crushed
1/4 teaspoon ground black pepper
Shredded cheddar cheese (optional)
Chopped onion (optional)
Dairy sour cream (optional)
Crushed red pepper (optional)

Directions
1. In a 3-quart saucepan cook and stir ground beef, sweet pepper, 1/2 cup chopped onion, and the garlic over medium heat until meat is brown and onion is tender. Drain off fat.

2. Stir in chili seasoning mix, undrained beans, undrained tomatoes, chili powder, salt, basil, and black pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. To serve, ladle chili into bowls. If desired, top each serving with cheese, chopped onion, and/or sour cream and pass crushed red pepper. Makes 8 main-dish servings.

3. Chili for Two: Prepare as above, except divide all ingredients in half.

4. Cincinnati-Style Chili: Prepare as above, except omit sweet pepper, basil, and optional garnishes. Add 1 to 2 tablespoons unsweetened cocoa powder, 1 tablespoon cider vinegar, 1 teaspoon Worcestershire sauce, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground allspice, 1/2 teaspoon ground cumin, and 1/4 teaspoon cayenne pepper with the tomato sauce. To serve, place 1/2 cup hot cooked spaghetti on each of 4 serving plates; make an indentation in center of each portion. Top each serving with some of the chili, 1 to 2 tablespoons shredded cheddar cheese, 1 to 2 tablespoons chopped onion, and/or 1/4 cup additional kidney beans.

well I'm having some Chinese its rice with shrimp maybe you could eat out some place or just have some soup or spaghetti

freezer pizza is yummy.. or cereal, or soup.

I going to roast a whole chicken seasoned with lemon, garlic, salt and pepper.

Snow Peas saute with shallots in olive oil.

Spinach salad with boiled eggs, bacon and a raspberry dressing.

how about some mashed potatoes and chicken?...or frozen pizza?..or takeout?..but if u wanna cook something just get some idaho spuds in a box at the market..follow directions on the box and they taste great!!!...kfc, mcdonalds, burger king, california pizza kitchen, chicken green bean noodle casserole...just buy campbells cream of mushroom soup...

Pasta with some butter, olive oil & garlic. Make sure to toss some Parmesan cheese on top, and have a side salad.

Or, if you have some box mac & cheese, make that, but saute some peppers and onions until soft, and mix that with a can of tuna. Hambone's Tuna Mac & cheese.

I'm having bacon wrapped scallops with potato casserole or macaroni salad and my son is having BBQ ribs with potato casserole
