Healthy Muffins (with chocolate chips?)?!
Anyone else got any healthy and delicious recipes?
Answers: I need recipes for healthy muffins, preferrably ones that include chocolate chips. I already make a great banana choc/chip muffin (oil instead of butter, splenda instead of sugar, ww flour etc.)

Zucchini-Chocolate Chip Muffins
Yes, vegetable in your muffin- plus walnut is heart healthy, with semi-sweet chocolate which is better for you Oil instead of butter - and if you must, I suppose you could use "baking" kind of Splenda- but I cannot guarantee results with that... never tried~.
INGREDIENTS
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup vegetable oil
1/4 cup milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded zucchini
1/4 cup miniature semisweet chocolate chips
1/4 cup chopped walnuts
DIRECTIONS
In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until muffins test done
Double Chocolate-Banana Muffins (Healthy)
1 1/2 cups all-purpose flour
3/4 cup artificial sweetener (Splenda)
1/4 cup unsweetened cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/3 cups bananas, mashed (4 ripe medium)
1 egg (or equivalent in egg substitute)
2 tablespoons vegetable oil
1/4 cup fat free sour cream
1/4 cup miniature chocolate chips
Preheat oven to 375 degrees.
Spray 8 wells of a 12 hole muffin pan with butter-flavored cooking spray or line with paper liners.
In a large bowl, combine flour, Splenda, cocoa, baking bowder and baking soda.
In a small bowl, combine bananas, egg, oil and sour cream.
Add banana mixture to flour mixture.
Mix gently to combine.
Fold in chocolate chips.
Evenly spoon batter into prepared muffin wells.
Bake for 20-25 minutes or until a tooth pick inserted in center comes out clean.
Place muffin pan on a wire rack and let set for 5 minutes.
Remove muffins from pan and continue cooling on wire rack.

1 cup all-purpose flour
2 teaspoons baking powder
1 banana
1/2 cup brown sugar, packed
4 tablespoons butter, melted
1 cup milk
2 eggs
1 teaspoon vanilla extract
1/2 cup chocolate chips
1/4 cup almonds

1. Preheat oven to 400 degrees and line muffin tin with paper liners.
2. In a small bowl, sift together whole wheat flour, all purpose flour and baking powder, set aside.
3. Mash together banana and brown sugar. Mix well.
4. Add melted butter, eggs and milk and vanilla. Beat together until well blended.
5. Stir flour into wet ingredients.
6. Fold in chocolate chips and almonds.
7. Pour batter into muffin cups, about 3/4 full and bake 18-22 minutes, or until done.
Serves 12.
