Fried Okra Recipes?!


Question: Anyone have some fried okra recipes? I used the 50/50 corn meal and flour combination with some cajun seasoning. I also used frozen okra...not sure if fresh would make that much of a difference. I wanted to know if there were other ways you could make it that would make it taste good.

INGREDIENTS:
1 pound fresh okra
2 eggs, beaten
4 to 6 dashes hot pepper sauce
1 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon ground cayenne pepper
oil for deep frying
PREPARATION:
Wash okra and drain well; cut off ends and discard. Cut okra crosswise into 1/2-inch slices. In a bowl, combine beaten eggs and hot sauce; add okra and stir to coat all pieces well. In a shallow dish, combine cornmeal, salt and cayenne.

Dip okra pieces into cornmeal mixture to coat well. Heat oil in the deep fryer to 375°. Fry okra in batches until browned, about 4 to 6 minutes for each batch. Drain on paper towels and serve immediately.
Serves 4.

frozen or fresh okra fried. add onions and diced tomatoes

Fried Okra

1 bag frozen cut-up okra (or equal amount of fresh okra cut up)
1-2 cup flour
1-2 cup cornmeal
salt and pepper
5 eggs, beaten

Heat about 1/4-inch of cooking oil in a frying pan.
Season flour/cornmeal with salt and pepper to taste.
NOTE: Flour and cornmeal may be mixed together or applied separately, and some recipes use only one or the other.
IF FLOUR AND CORNMEAL ARE MIXED: dredge okra in beaten eggs, then dredge in flour-cornmeal mixture.
IF FLOUR AND CORNMEAL ARE APPLIED SEPARATELY: dredge okra in flour, then egg, then cornmeal.
Place okra in heated oil and fry on medium heat until golden brown Stir occasionally so all sides get browned.
Drain on a paper towel and enjoy.

Fresh Okra is best But if it's not in season use the frozen..also i don't like recipes with flour..it adds no flavor to the okra..just use the corn meal. Also don't add too much at once to the oil, it brings the temp of the oil down and the coating will fall off..

10 pods okra, sliced in 1/4 inch pieces

1/2 cup vegetable oil



DIRECTIONS
In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.
Heat oil in a large skillet over medium-high heat. Dredge okra in the cornmeal mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on paper towels.

Adding salt to what you are already doing would make it taste alot better.
