Question: BREAKFAST BURRITOS

1 lb.bulk breakfast sausage
8 eggs
Shredded Cheese
Sliced avocado
Sour Cream
Salsa
4 flour tortillas

Fry sausage in a skillet. Drain off fat and pat dry with a paper towel. Break eggs in a bowl and scramble with a fork. Add eggs to skillet with sausage in it. Cook on medium heat until fluffy. Top with cheese.

Heat flour tortillas in microwave on a plate covered with a paper towel. Fill each tortilla with an adequate amount of egg/sausage mixture and garnish with sliced avocado, salsa & sourcream. Serve Hot.


VANISHING BREAKFAST ROLLS

10 refrigerator biscuits
1 tablespoon butter
2 tablespoons sugar
1/2 teaspoon cinnamon
5 large marshmallows, cut in half

Preheat oven to 375*.

Melt butter in microwave for 20 seconds.

Mix cinnamon and sugar. Cut marshmallows in half and roll in melted butter, then cinnamon-sugar minxture.

Pat each biscuit flat. Wrap the marshmallows in biscuit.

Seal the edges of the biscuit. Do not get sugar on edges of biscuit or it will not seal.

Place in oven for 11-13 minutes or until lightly browned.

Prepare a casserole the night before. Pop it in the microwave when you wake up and it will be ready to go when you are.
Incorporate complex carbohydrates, such as whole wheat toast and bagels. Spread peanut butter and raisins on top of either for added flavor.
Bake bran muffins early in the week, then grab one or two each morning. Or check out a local bakery for healthy varieties.
Make waffles Sunday morning and freeze the leftovers. You can pop ‘em in the toaster for a homemade breakfast. Also, grocery stores sell frozen whole grain selections.

This is the recipe for a breakfast quesadilla:

1/2 cup egg substitute
1/2 cup grated jalapeno cheddar cheese
2 soft fat free tortillas, 6 inch
1 tablespoon diced green pepper
1 tablespoon diced onion
vegetable cooking spray
2 tablespoons grated cheddar cheese

In a skillet, prepare egg substitutes with green peppers, onions, and 1/2 cup cheese.
Flip once.
Cook until done.
Heat tortillas in the microwave about 30 seconds, until warm.
Layer a tortilla, egg mixture and tortilla with cheese on top.
Cut into six pieces.

Southwest Breakfast Casserole
A great way to feed a hungry crowd for breakfast, this can be made ahead and put in the oven right before your guests arrive. Also great for Potlucks!

6 Slices white bread, crusts removed
1 lb Pork Sausage
4 C Colby Cheese, shredded
4 oz Chopped Green Chilis (small can)
6 eggs
1 t salt
1 t dry mustard
2 C Half & Half
Butter or Margarine, softened

1. Lightly butter both side of bread slices and place in 9x13-inch baking dish.
2. In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
3. Sprinkle cheese over sausage. Follow with a layer of chopped green chilies.
4. In medium bowl, beat eggs lightly. Add salt, dry mustard and half-and-half. Mix thoroughly. Pour over casserole.
5. Cover with foil and refrigerate overnight.
6. To bake, preheat oven to 350°F and bake casserole 45 minutes, or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with picante sauce on the side.

Wheaties and shredded wheat cereal. Eggs and whole grain english muffins. Canadian bacon or turkey bacon. You need to make things that are high in protein or fiber or both. add a pieice of fruit.

How about a goat cheese omelet.

Add half and half to the eggs (just a teaspoon or two) - makes it real creamy. Just before the eggs set, add about 1/4 cup crumbled goat cheese. Add some parsley and a pinch of dill.
