Salsa Chicken over Rice

Ingredients:

2 cups cooked white rice, held warm (or brown rice would be yummy)
1 tablespoon vegetable oil
1 pound boneless, skinless chicken breast halves, cut into strips
1 medium onion, chopped
1 small red bell pepper, sliced (my mom used green b/c that is what we had)
1 16oz jar salsa (mild or medium - depends on how spicy you want it)
1/2 cup 4 cheese Mexican blend, divided

(Can also add seasonings as desired, for flavor)

Directions:
Garnish suggestions: sour cream, chopped fresh cilantro

HEAT oil in large skillet over medium-high heat. Add chicken, onion & bell pepper; cook, stirring occasionally, for 10-12 minutes or until chicken is no longer pink. Stir in salsa; bring to a boil. remove from heat; sprinkle with cheese. Cover; let stand for 5 minutes or until cheese is melted.

SERVE over rice, garnish as desired

Serves 2

2 (6-8 oz) fillets of salmon
2 T mayonnaise (can be low-fat)
2 T sour cream (can be low-fat)
onion powder
dill

Place the salmon patties in a cake pan lined with foil. Spread on the mayonnaise/sour cream mixture just to coat. Sprinkle with the onion powder and dill. Seal the foil and bake in 400o oven for 30 minutes.

Serve with some nice steamed broccoli and a salad. Have fruit for dessert.

Here's one of my husband's creations:
Turkey Meat Loaf
1 pound free range fed ground dark turkey meat
1/2 diced sweet onion
1/2 bag plain bread cubes for stuffing
optional: 1 rib celery, diced, or 1/4 teaspoon celery seed
1 Carton organic Turkey Gravy

Serves 2 to 4
Heat oven to 350, place large cast iron skillet (11 inch) in oven to heat.
In a large mixing bowl, mix ground turkey, onion, bread cubes, and celery or celery seed.
Salt and pepper to taste. Mix well.
Press into hot skillet, bake for 25 minutes.
Serve with warmed gravy.
Wonderful with baked or steamed Yukon Gold potatoes.

If you want a healthy dinner, try this recipe:
Gluten Free Family Favorite Casserole

1 lb ground beef
2 Cups spaghetti sauce
3 Cups GF dry noodles, spiral works well
3 green onions, chopped
1 pkg 3 oz cream cheese
1 Cup sour cream
? Cup shredded cheddar cheese

In a skillet cook ground beef, drain fat. Stir in spaghetti sauce. Simmer until warm. Cook the noodles according to package directions. Drain noodles and place in a 2 ? quart greased baking dish. Top with meat and sauce. Blend together the cream cheese, sour cream and green onions. Spread over the top of the meat and sauce. Sprinkle with cheddar cheese. Bake at 350 degrees for 30 minutes.
Chinese recipe:
1 head of cabbage, shredded
2 pkgs. Top Ramen (oriental flavor)
1/2 cup sliced almonds
1/2 cup chopped green onions
1 large or 2 small cans chunk white chicken
1 cup oil
6 Tbls. cider vinegar
4 Tbls. sugar

Mix oil, vinegar, sugar & Top Ramen seasoning packets. Scrunch up noodles into rest of ingredients. Add dressing shortly before serving.

Here is a Greek salad recipe:
Prep: 5 min.

1-1/3 cups spinach leaves, washed and torn into pieces, tough stems discarded
1/2 lb. packaged salad
1-1/4 tomatoes, cut into wedges
3/4 cucumber, peeled and thinly sliced
3/4 red bell pepper, seeded and thinly sliced
3 ounces pitted black olives, thinly sliced
3 ounces feta cheese, crumbled
1/2 cup Italian dressing
3/4 cup plus 1 Tbs. croutons

Combine first 7 ingredients in a salad bowl and toss. Pour dressing over salad just before serving. Season with salt and pepper to taste and toss. Serve with croutons.
Indian Letin Soup recipe:
1 clove garlic
1 inch piece fresh ginger
1/2 small bulb fennel, cored and cut into chunks or 1 celery stalk
1 small carrot, peeled and cut into chunks
1 small parsnip, peeled and chunked
1 large shallot, cut in half
3 Tbs. butter or olive oil
2 tsp. curry powder
1 cup brown lentils, picked over and rinsed.
1 qt. homemade or low salt chicken broth
1 tsp kosher salt
1/4 tsp black pepper, freshly ground

This is a great tasting soup that is both easy to make and healthy. It even tastes better on day 2 since the curry flavor develops more.

Put garlic, ginger, fennel(or celery), carrot, parsnip and shallot in a food processor and pulse into minced. Put about 2 Tbs. of butter or olive oil in soup pot and heat for a minute or two. Add the minced vegetables and cook until softened for about 5 minutes. Add the curry powder and cook for about a minute more. Stir frequently and add more oil if necessary. Add the lentils and the broth. Bring to a boil and then simmer(turn down heat) with lid on for about 45 minutes. Add salt and pepper and cilantro(small handful) if desired. Pulse about half of the soup in the food processor and then add it back to the pot.

Turkey Loaf

2 lbs ground turkey
1 package mushrooms
? cup bread crumbs
? cup water
1/3 cup bbq sauce
2 eggs
1 package onion soup mix

Mix everything together, put in a meatloaf pan and bake at 350 for 1 Hour. Ground beef can be substituted, but turkey is healthier. I also think that it tastes better.

Broccoli Rice Casserole

A creamy side dish that is baked in a delicious cheese sauce. This is the best broccoli rice casserole you will ever eat!

INGREDIENTS
2 (10 ounce) packages frozen chopped broccoli
3 cups instant rice
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 1/4 cups water
1 (16 ounce) package processed American cheese, cubed
1 tablespoon butter
1 bunch celery, chopped
1 large onion, chopped
salt and pepper to taste


DIRECTIONS
Cook broccoli and rice according to package directions. Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan over low heat, mix cream of mushroom soup, cream of chicken soup, and 1 1/4 cups water. Gradually stir in cheese until melted. Be careful that the cheese doesn't burn.
Melt butter in a large skillet over medium-high heat, and saute celery and onion until soft.
In a large mixing bowl, combine broccoli, rice, soup and cheese mixture, celery and onion. Season with salt and pepper. Pour mixture into a 9x13 inch baking dish.
Bake in the preheated oven for 45 minutes, until bubbly and lightly brown
