Side dish slump?!


Question: I'm so sick of having the same side dishes with dinner! Every time we do have a side dish it's either corn or green beans. I guess just because they're an easy option. We are having BBQ chicken tonight and I would like to have something different to go along. It is just my husband and I, so nothing big. Any recipes or suggestions would be greatly appreciated. Thanks!

HI! I see your stomach has gotten larger! I am sure you are very excited for the arrival of your baby! A great dish that goes great with any dish is Montecarlo Potatoes. They are super easy! This is all you need:

- 2 Potatoes
- Mozzarella Grated Cheese
- Bacon or Bacon Bits
- Onions or Chillots

Bake your 2 potatoes in the oven. When done take the insides of the potatoes out and put it into a bowl. Then add some grated cheese, chillots and bacon into it. Whip it with a mixer (hand held). KEEP THE POTATOE SKINS. After it is whipped put the mixture back into the skins and put grated cheese on top. Bake in the oven until the cheese is melted! ENJOY

how about baked beans or brown rice?

Baked beans, coleslaw and cornbread.

baked beans, cole slaw, potatoes made on the bbq in foil packets, or potato salad.

It's winter so try some brussels sprouts. Just cut them in half, toss with a little olive oil, salt and pepper and roast them in a 400 degree oven for 20-25 minutes. They should just begin to turn brown at the edges.

If you have time to run out, go to your grocery store's deli section. They have lots of different side dishes.

While you are there check out their roasted chickens, hams and roast beef. These are pre-cooked and are delicious.

The freezer section has all type of bags and small boxes of vegetables pre cooked and frozen. Just pop into your microwave or heat on top of your stove. Read the directions on the containers.

You can buy potato salad and coleslaw at Ky. Fried Chicken. Their mashed potatoes are usually very good too.

I have to say that the perfect side dish for BBQ chicken is potato salad!

To make an easy potato salad boil 4 medium potatoes and two eggs. Add mayo and mustard, salt and pepper, and relish to taste. Chill before eating.

If you don't have time to do this, most grocery stores have potato salad ready in their deli.

How about a baked potato with butter, sour cream, and cheese.

saute a little onion & garlic in oil then add som mixed frozen vegies & a little either water or chicken broth & simmer for about 15 min. mean while cook some rice or pasta in broth & when done you can serve the vegies on top or if you like before you add the vegies you can saute the rice or pasta but add about 2 cups water or broth then the veggies so you can have it saucey & simmer for about 20-25 min.

potato salad goes great with bbq

I usually use left over mashed

If you are going to make it with out using left over mash, then prepare it using instant mash, just don't use the amount of liquids it says on the box, you want the mash to be a bit dry & pasty

For 4 servings of instant mash add
1/2 cup mayo
1/4 cup yellow or spicey mustard
1/4 cup sweet pickle relish
1 tsp of sugar

I also add a dash each of celery salt, dried chives and any other dried herb I think will go good.

mix together and chill before serving

add a big salad w/ croutons bacon bits , the works to some of the above suggestions

Mac and Cheese sounds good with it right now for some reason

Potato salad, cole slaw, carrots, baked potato, rice, pasta with a simple tomato sauce, BLT salad, parsnips, turnip, the list is endless.

Here is a good potato salad recipe, easy too.

For just 2 people
2 medium/large potatos
1 stalk celery
2-3 slices of bacon, precooked, crumbled
2 tbsp white vinegar
1/4-1/2 C mayonaise
Salt and pepper to taste.

peel cut up and boil the potatos. In a bowl mix vinegar, mayo, celery, bacon, salt and pepper, add cooled potatos. Mix and serve. Try a little BBQ sauce on top of your potato salad, it's yummy.

I would serve with baked beans as well, or sauteed vegis like zucchini, mushrooms, onions, green/red bell pepper, and sugar snap peas in shell. This is a good mix, serve with a little dab of butter.

Baked potatoes, mac and cheese, baked beans, white or yellow rice.

An easy side dish is rice. Now before you stop reading, well, just continue because it's more than just plain rice!

Turn the oven to 350-375, add enough water in a pan for the amount of rice, add a few tablespoons of chicken base, chop up some mushrooms, green peppers (or any colour pepper), onions, add some salt and pepper to taste, cover with foil and forget about it for 30 minutes (I forgot to mention you mix all those ingredients in a pan THEN stick in the oven). Check it every so often to see if more water is needed. Take your fork and gently break up the rice.

We make this rice (we call it steam fried rice) with almost every BBQ'd chicken. It's so delicious...the key is the chicken base.

Scalloped potatoes are your answer........
they are pretty easy and oh, so yummy....

I personally love having brocolli, and potatoe salad!

I don't know if you're still pregnant, but I learned this recipe when I was pregnant and still love it. Generally this makes about a small round cake pan full, but you will want to reheat for later meals or snacking.

Take four average sized red skinned potatoes quarter and boil them in well salted water. In the mic melt 1/2 stick of butter. Once the potatoes are almost done, you still want them firm in the middle, drain and smash (skin on) with the melted butter, ranch dressing and pepper. I can't give you exact amounts it really depends on the size of the potatoes and humidity. They should be a good mixture of mostly creamy, but still slightly lumpy. Then fold in about 1/2 cup French's french fried onions. Taste for seasoning. Pour this mixture in a baking dish sprayed with Pam. Bake on 400 until the top is slightly crunchy. Then top with cheddar cheese and crumbled bacon or bacon bits. Back into the oven until the cheese is bubbly. It's horribly unhealty buy good.

Another one we really like is sauteed broccoli. Again it depends on how much you are going to make. I will provide the information for one box of frozen broccoli. In a sautee pan melt each 1 tbsp. butter and olive oil with 1 clove finely diced garlic on a low heat. Then add the box of broccoli flourettes. Cover for 5 minutes, then uncover and let sautee. I actually like when the broccoli gets a little bit browned, not burnt, on the tips.

Mashed potatoes or macaroni and cheese... My favorite comfort foods, but they're my sidedish slumps...

I like to have baked bean, potato salad and corn with barbecue chicken.
My favorite Potato Salad
boil 3-4 potatoes whole with skins on until tender, drain and let them cool, peel and then dice, add miracle whip, a little mustard, dill relish and 2 hard boiled eggs. salt and pepper

Any time you're BBQ'ing, I recommend campfire potatoes. Just cut a few potatoes inhalf length-wise, then into small slices, throw in some chopped up onion, whatever your favorite seasonings or herbs happen to be, and a half a stick of butter. Throw all of that into a pocket of aluminum foil and grill it, turning at least once until the potatoes are soft. be careful when pulling open the pockets, but enjoy!!! They're delicious!
