Glazed Almonds
4 tablespoons butter (no substitutes), divided
2 cups blanched whole almonds
3/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Line a baking sheet with foil. Grease the foil with 1 tablespoon butter; set aside. In a large heavy skillet, combine the almonds, sugar and remaining butter. Cook and stir over medium heat for 6-8 minutes or until sugar is golden brown.
Remove from the heat; carefully stir in vanilla. Spread onto prepared baking sheet; immediately sprinkle with salt. Cool before breaking into pieces. Store in an airtight container.



Sugar Spiced Almonds
1/4 cup sugar
2 tablespoons vegetable oil
1 teaspoon cayenne pepper
1/2 teaspoon garlic salt
1/2 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes
2 cups unblanched whole almonds
In a bowl, combine the first six ingredients. Add almonds; toss to coat. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 250 degrees F for 30 minutes or until lightly browned, stirring occasionally. Cool. Store in an airtight container.


Homemade Smoked Almonds
1 egg white
2 teaspoons garlic powder
2 teaspoons celery salt
1/4 teaspoon salt
1/2 teaspoon liquid smoke flavoring
3 cups whole unblanched almonds, toasted and cooled
In a bowl, whisk egg white until foamy. Add garlic powder, celery salt, salt and liquid smoke; stir until blended. Add almonds and stir until well coated. Evenly spread almonds in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake at 300 degrees F for 30 minutes, stirring every 10 minutes. Cool. Store in an airtight container.



Popcorn Almond Brittle
6 cups popped popcorn
1 cup slivered almonds
1/2 cup red and green candied cherries, chopped
1 1/2 cups sugar
1/2 cup corn syrup
1/2 cup water
1/2 teaspoon salt
2 tablespoons butter or margarine
1 teaspoon vanilla extract
In a greased 13-in.x 9-in. x 2-in. baking pan, combine popcorn, almonds and cherries. Bake at 350 degrees F for 10 minutes. Turn oven off and keep mixture warm in the oven. Meanwhile, in a large heavy saucepan, combine the sugar, corn syrup, water and salt; cook and stir over low heat until sugar is dissolved. Cook over medium heat, without stirring, until a candy thermometer reads 305 degrees F-310 degrees F (hard-crack stage). Remove from the heat; stir in butter and vanilla. Immediately pour over popcorn mixture; toss gently. Spread onto a greased baking sheet. When cool, break into small pieces.
We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212 degrees F. Adjust your recipe temperature up or down based on your test.

How To Toast Almonds

Saucepan method:
Place almonds in a heavy, ungreased skillet.
Stir often over medium heat until golden brown.

Oven method:
Preheat oven to 350 degrees F.
Spread nuts in one layer on ungreased shallow baking pan.
Bake for 10 to 15 minutes, stirring occasionally, until golden.

Microwave method:
Place 1/2 cup slivered almonds and 1 tablespoon margarine or butter in a 9-inch microwave-proof pie plate.
Microwave on high, stirring every minute until brown, 4 to 5 minutes.

better to leave them overnight in ater and then in the morning either consume 5 of them after peeling or you can grind them in mixer or chop them fine and add in dishes,or roast them add dip in caramalised sugar,or make sweets adding them,or use in puddings
