I have a snow day so I am going to make dinner for my family?!


Question: Ok so we have a snow day and I am going to make dinner for my family. I am a pretty good and experienced cook and I already know what I want to make but I just have a question about it. I am making a marinade for pork chops with mushrooms, onions, olive oil, etc and I was wondering how long I should marinade it in the fridge for? Also I am going to make potatoes. We have the small red potatoes, I think they are called baby russets, but anyways I was gonna cut them in half, put a few herbs and some olive oil on top and roast them, but can I put them in the same pan as the pork chops? How long and on what should I cook them both for? I don't need recipes, just answers to these questions please. Thanks

Generally, the longer the better for a marinade. I would think that 350-375 degrees would be fine, and small red potatoes wouldn't take very long; it only takes about an hour to bake a large, whole potato, so I would think that 20 to 30 minutes would be plenty of time. I would think that it would be fine to roast them in the same pan, and the juices from the chops would flavor the potatoes well. Just make sure the chops are cooked well, until the juice runs clear instead of red. If the chops are thin, as in half an inch thick, it might only take 20 minutes, but if they are an inch thick, maybe twice that time.

Well as a general rule of thumb, I would say the longer you can marinade the better. However, I think that is more standard for beef or chicken. Personally, I don't like to leave pork in a marinade for too long because it gets almost mushy. Too soft and overwhelming. I think it's just the original texture. So I'd say marinade about an hour tops. Also, yes you can put the potatoes in the same pan as the pork chops, but depending how thick the pork chops are, you might want the potatoes to go longer. I usually cook both at 375, and the potatoes should take about an hour. Pork you would have to guess based on the thickness and quantity.

Basic rule about marinading....marinade longer for better results/taste. you can add them with the pork chops, but it would be kind of tough for them to be cooked properly i guess, when with the pork chops. Roast the potatos seperately, for about 8-10 minutes at 375 degrees, then do the pork chops at a broil for about 10-15 minutes, depending on what the recipe you have calls for.

Two to four hours is probably enough time in the marinade. The potatoes can go in the same pan, the soaked up drippings would make Emeril, and me, happy. The time to cook the chops depends on how thick they are. I would brown them first and then degalze the saute pan with some of the marinade. Then keep an eye on the whole thing in a 375 oven. If either the chops or the potatoes get done sooner than the other, remove and keep warm until the other catches up. Remember to let the chops rest. Have fun!
