What goes well with pierogis?!

I make them into a 1 pan dinner (well 2 pans - need 1 to boil them in)
After the perogies are cooked and drained, set them aside for a couple mins.
In a frying pan, saute a little chopped onion, celery and garlic till tender in EVVO (extra virgin olive oil), then add cubes or strips of cooked ham (cooked bacon is nice too, so is sausage) .. stir it around until heated. Sprinkle in some spices, like pepper, parsley, roasted garlic and pepper, etc. I don't add salt at all since the ham and cheese have sodium in them, but that's personal preference.
Add the perogies, stir well to mix everything together and once the perogies are as browned as you like them, turn off the heat (leaving pan on the hot burner), sprinkle it all with shredded cheddar cheese, put a lid over the pan, and wait till the cheese melts, usually a couple of mins or so.
Sometimes I throw in a small amount of cooked peas or for color, or use a mix of cheddar and mozzerella.
Serve with a tossed green salad and a cooked vegetable. They're also good (hot or cold) with a bit of bottled Ranch dressing, if you like it.
It's one of those forgiving recipes that you can add to or change around to suit your family's tastes, as well as quick to make, filling and fairly cheap too ( tho not a good recipe you have to watch your fat intake unfortunately)

well, anything really. chicken soup, italian beef, steamed/sauteed vegetables, etc.

are you having it as a meal or a side dish? first course, as in with salad, instead of bread, and other deli meats? or second course, as in with soup or as a side dish with the meat, or possibly even, instead of dessert????

If you're just cooking them plain, I like polish sausage or turkey sausage sauteed with green peppers!
