Side dishes for ribs?!

Question: I have ribs in the oven - they will be done in 2 hours. Any suggestions on what to make with them before I run to the store? The bf says mashed potatoes...but....we have them a lot so I am looking for other ideas. Thanks

I was going to suggest my fantastic white bean salad with cilantro & lime but I think that's a bit over the top for him.

How about grilled asparagus with a butter sauce. That's simple. If you're looking for a carb though like potatoes, why not switch that for pasta. You can do an angel hair pasta with some herbs and crushed garlic. I like cooking from scratch but those Pasta Roni boxes are SO good.

Edit: You know what is to die for! Small red potatoes (boiled) and in a small pan sautee fresh chopped garlic & rosemary in a little olive oil and pour into the potatoes. It is heavenly!

lol...we normally do mashed potatoes too :-)
If not, twice basked potatoes or steemed veggies.

cole slaw or potato salad

I agree.. cole slaw or potato salad... even mac salad! Enjoy!

Baked or Roasted potatoes. Parsnips and Butternut can be cooked along side the ribs.

Some side dishes to go with ribs are:

Potato salad
Cole slaw
Macaroni salad
Baked potatoes
Baked beans/Pork and beans/BBQ beans/Cowboy beans
Macaroni and cheese
Green bean casserole
Creamed corn/corn on the cob

Suggest a compromise! I would make a quick Broccoli Slaw and some roasted or baked potatoes - easy and satisfies!

i would go baked potato and corn and a salad and an upside down cake an milk and beer and rice and bird seed to top it all

I like corn casserole with anything BBQ and I like creamed spinach too

The last few times I have made ribs I have 'par-boiled' them for about thirty minutes to get the fat out and give them a head start on the cooking time...then I take the broth from the ribs in the pan that I cooked them in and cook pinto beans or sour kraut or cabbage or something that can use the pork broth to cook and flavor that side dish.

Also I like BBQ ribs on the grill, macaroni and cheese (velveeta, milk and butter) baked beans with lots of brown sugar.

buy some potato salad for the bf and make some fresh broccoli for yourselves.

Baked apples, slaw

For me it would have to be baked potatoes & either corn on the cob (the little frozen ones) or creamed corn & tossed salad.

I'd do a side of french kisses. It beats broccoli, mashed potatoes, and corn. Hmm is it time for Gandma to come over and take ur daughter for a night.

God bless u,

Daniel
