i just had a frozen pizza today but yesterday i made some chicken cacciatore with cheesy garlic bread.

Homemade mac n' cheese with a green salad filled with lots of tomatoes.
This is the recipe I used and it was outstanding!
Creamy Mac N' Cheese
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1 dash pepper
1/2 teaspoon mustard powder
1 cup milk
2 cups sharp cheddar cheese, shredded
2 cups macaroni, cooked
--Make a ‘roux’ by melting butter in pan and adding flour. Stir constantly and cook until it is the color of caramel candy. It burns easily so stir stir stir! Slowly and carefully add milk while stirring. When milk starts to steam add cheese and seasonings and stir until melted and well combined. Pour over cooked macaroni noodles, stir until well combined, and serve.
BBQ'd chicken, rice and vegetables with a fruit salad and skim milk to drink. This is always a favorite for my children.
mini meatloafs...make as normal, but put in muffin tins, 350 for 15 mins...easy and easy to reheat and freeze.

If you have the time go out and get some fresh (not frozen) flounder and bread it with egg and plain breadcrumbs mixed with an Italian seasoning packet. Fry it and enjoy it along with your favorite sides such as corn, mashed potatoes, salad, etc.
If you have less time and certainly don't want to go out but have some chicken cutlets, pasta, and red peppers then fry up some onion over a very low flame until nicely browned, add red peppers and garlic and saute briefly, add to fresh hot pasta along with your favorite seasonings and some chicken broth if you like. It's almost impossible to ruin either of these dishes so play around and enjoy and give someone a real home-cooked meal!
We just had dinner. Minute rice w/ a touch of soy sauce. Frozen vegetables and baked chicken. Chicken on top of rice w/ veggies surrounding it. Pineapple slices on cottage cheese on the side. Yummy!!
